    Sweet corn pudding is a creamy baked dish that tastes so light and comforting. It is made with fresh sweet corn, egg, milk, flour, butter and sugar. The ingredients are mixed and baked into a soft, custard like pudding with a light golden top. Serve it warm or chilled with grilled meat, bread or roasted vegetables.

    Delicious sweet corn pudding which taste so delicious and creamy. It is perfect to put on your thanksgiving table. Kids will love it for sure. Sweet corn pudding is a crowd pleaser. The top of this is crusty and buttery while the interior is so silky and custardy. Normally it is made using cream style sweet corn.

    But i used normal sweetcorn which i pureed in a blender and also added some whole kernels. The pudding turned out to be delicious. This will be a great recipe to put on your thanksgiving table.

    What I really love about this recipe is how easy it is to put together. You just mix the ingredients in a bowl with a spoon, combine everything and bake. As it bakes, the pudding turns creamy and buttery on the inside, with a lightly crusted golden brown top that makes every spoonful satisfying. It doesn't involve any fancy tools or complicated steps, even kids can bake this recipe.

    Egg - Egg helps bind all the ingredients together and makes the pudding soft and rich. 

    Milk - Milk adds creaminess and moisture to the pudding. Use full fat cream milk for a richer taste. 

    Melted butter - Butter adds a rich flavour and turns the pudding into a melt-in-mouth texture. It also enhances the corn flavour. 

    Sugar - `Sugar balances the flavour and sweetens the pudding. It also makes the browning on top while baking. Adjust quantity based on corn taste. 

    Vanilla extract - Vanilla extract enhances the corn flavour and balances the taste with a sweet aroma. 

    All purpose flour - Plain flour is added to thicken the pudding and it sets properly when baked.


    Step by Step Pictures

    1)Take ½ cup of the sweet corn and puree it roughly. Set aside.

    2)Take egg and sugar in a bowl.

    3)Whisk this till creamy and fluffy.

    4)Pour in milk.

    5)Add in a splash of vanilla and mix well.

    6)Add in crushed sweet corn into the mixture.

    7)Add in sweet corn.

    8)Add in plain flour.

    9)Mix well till it forms a smooth batter.

    10)Add in oil. You can use melted butter instead of oil.

    11)Mix well.

    12)Now take a baking dish, spread butter generously on the baking dish.

    13)Pour the sweet corn mixture into the baking dish.

    14)Bake until golden and bubbly. Allow it to set for 15 minutes before serving.

    15)Serve warm.

    16)Enjoy.

    • You can make the pudding with frozen or canned corn, if fresh ones are not available. 
    • Let the eggs and milk come to room temperature before mixing.
    • Place your baking dish in a tray of water while it bakes. It helps the pudding to cook evenly. 
    • For extra flavour, add spices like cinnamon, nutmeg or grated cheese to enhance the taste.

    Store the corn pudding in an airtight container and refrigerate for up to 3 to 5 days.

    Q. Can I use frozen or canned corn instead of fresh ? 

    Yes, you can. If you are using frozen or canned corn, thaw them or drain the water completely. This helps to prevent the pudding from becoming soggy. 

    Q. How long does it take to bake ? 

    Bake the pudding at 180 degree celsius for 20 to 30 minutes or until the top turns lightly golden and set. 

    Q. How do I know when it's done ? 

    You will know the pudding is done when the edges look set and firm and the top is set with a light golden crust. 

    Q. Is this a dessert or a side dish ? 

    Well, it can be enjoyed as both. It can be served warm as a dessert or with a hint of fresh herbs, cheese, it makes a tasty side dish for grilled meat, vegetables or bread. 

    Q. Why is my pudding too watery ?

    This happens when the pudding is underbaked or it hasn't fully set. And also rest the pudding for at least 15 to 20 minutes after baking. This allows it to absorb the extra moisture and will set evenly. 

    Q. Can I steam this pudding instead of baking ? 

    Yes, steaming also works. If you're going to steam, then cover the dish tightly with foil or parchment paper to steal the top. Place them inside a steamer and steam until the pudding is set and cooked fully.

    • 1 cup Sweet corn
    • 1 large Egg
    • ½ cup Whole Milk
    • ¼ cup Melted Butter or Oil
    • ¼ cup Granulated Sugar
    • 1 teaspoon Vanilla Extract

    Instructions
     

    • Preheat oven to 180 degree C (360 degree F). Grease a baking pan with butter and set aside. Take ½ cup of the sweet corn and puree roughly.
    • Take eggs, sugar, vanilla and milk in a bowl and mix well. Add in crushed sweet corn, whole sweet corn and plain flour. Mix well. Add in melted butter or oil and mix well to a smooth batter.
    • Pour it into the baking pan and bake for 25 to 30 mins. Once golden, remove from oven and allow it to set for 10 minutes.
    • Now scoop and serve hot.
