Sweet potato roast taste really delicious. The sweetness from the potatoes gets intense when it is cooked. This goes well with rice, sambar or any gravy.

Preparation Time : 10 mins
Cooking Time : 30 mins
Sweet Potatoes - 2 large peeled and cubed
Oil - 3 tblspn
Mustard Seeds / Kaduku - 1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Curry leaves a sprig
Salt to taste
Turmeric Powder / Manjal Podi - 1 tsp
Chilli Powder - 1 tsp
Heat oil in a pan, add in mustard seeds, urad dal and curry leaves. Let them sizzle.
Add sweet potatoes, salt and turmeric and toss well.
Cover and cook till potatoes are tender.
Now increase the heat and cook till potatoes get golden brown.
Now add in chilli powder and mix well.

|heat oil in a pan|
|add mustard seeds, urad dal and curry leaves|
|let them sizzle|
|add in sweet potatoes|
|add salt and turmeric powder|
|cover and cook till potatoes are tender|
|now it is well cooked|
|increase the heat and cook till the potatoes are nicely browned|
|add chilli powder|
