A healthy dish which has lots of vegetables in it that is cooked in a lovely coconut and yoghurt paste. This is a typical dish in kerala..My mum used to add turmeric powder and instead of curd, she used to add tamarind juice. But this method is so good. You could add pumpkin, cucumber and any vegetables you want, but I am not a big fan of those veggies so I used my favorite vegetables. Then try to add thick unsour curd for this.I served this with steamed rice, keralan style brinjal curry, raw banana fry, rasam, curd and papad..How perfect lunch is that..We invited our aunt for lunch,She was so amazed about this lunch.I send this recipe to Blogging Marathon's Day 6 with the theme “Regional Special” So I hope you all will give it a try and let me know what you think.
