Malabar Avial(Mixed Vegetables cooked with Coconut)

Malabar Avial
A healthy dish which has lots of vegetables in it that is cooked in a lovely coconut and yoghurt paste.This is a typical dish in kerala..My mum used to add turmeric powder and instead of curd,she used to add tamarind juice.But this method is so good.You could add pumpkin,cucumber and any vegetables you want,but I am not a big fan of those veggies so I used my favorite vegetables.Then try to add thick unsour curd for this.I served this with steamed rice,keralan style brinjal curry,raw banana fry,rasam,curd and papad..How perfect lunch is that..We invited our aunt for lunch,She was so amazed about this lunch.So I hope you all will give it a try and let me know what you think.


Carrot-1 cut lengthwise
Potato-1 cut lengthwise
Beans-5 cut lengthwise
Raw banana-1 cut lengthwise
Brinjal-1 cut lengthwise
Frozen Peas-1 cup
Curd-1 cup
Mustard seeds-1 tsp
Cumin seeds-1 tsp
Curry leaves-1 spring
Coconut oil-2 tblpsn

For Masala:

Coconut-1 cup
Green chilli-2
Cumin seeds(jeera)-1 tsp


Grind coconut,cumin seeds and green chilli together into a fine paste.

In a kadai add all the vegetables except peas and brinjal.pour in some water and season with some salt .Cook till the vegetables are done.

Now add in brinjal and frozen peas and cook for 2 min.

Pour in the coconut paste and mix well.let it cook for 3 min.Pour in the curd and mix well.switch of the flame.

In a small pan heat oil and splatter some mustard and cumin seeds.Add in curry leaves and fry for 30 sec.

Pour this seasonings into the avial and mix well.Serve hot with rice.

Pour in seasonings

Hi Sarah here..
Wat we do it after we put the Masala n the curd n bring the entire thing to boil, we just put some fresh curry leaves and pour some coconut oil on it. That's all.
The seasoning of jeera n mustard can be avoided..
Anyway.. Amazing effort. N super cool explanation of steps.. Way to go..
