Preparation Time : 10 mins
Cooking Time: 15 mins
Chilling Time : 12 to 15 hours
Makes : 1/2 liter

Ingredients:

Milk - 1/2 cup
Cream - 1/2 cup (25% fat)
Sugar - 1/4 cup

For Caramel:
Granulated Sugar - 1/4 cup
Cream - 1/2 cup ( 25% fat)
Vanilla Essence - 1/2 tsp
Salt - 1/2 tsp

Method:

Take 1/4 cup sugar in a nonstick sauce pan..Heat till the sugar starts to melt. Keep cooking, it will start to get darker in colour and golden. Once it reches that stage, remove from heat and add in cream and mix well. Add in salt and vanilla. Mix well

Leave this to cool down.

Take milk, cream and remaining sugar in a sauce pan and boil it. Once it boils, turn off the heat and remove it.

Let both the mix cool down completely. Now pour the milk mix over the caramel and give a good mix.

Pour this into a container and freeze for 3 hours.

Once it is frozen, scoop this into a mixer and give a good whiz. Pour it back into container and freeze another 3 to 4 hours. blend this for one more time and freeze overnight.

Scopp and serve.

  11. The caramel is very hard to make for beginners like me. :( Wish I new how much time it takes and the heat needed so I could get it right.

  12. @Carmen Quintanathe caramel will take around 8 to 10 mins. It depends on the heat of your stove as well.
