Eggless Banana and Pineapple Cake Recipe - Easy Banana Layer Cake Recipe



Many of my viewers asked me for a fondant cake, so i decided to give it a try..For making that i want to make a layer cake..When i was thinking what to make. I remembered few over ripe banana lying in my fridge. I also had few pineapple slices. So i decided to make a banana layer cake, i used pineapples in this because it makes the cake moist and flavourful..


I made thise cake and frosted it with chocolate buttercream, then covered the entire cake in fondant. I made a simple bow for the cake, even though it was not perfect, i loved it..Not bad for a home cook right..Will share how to make the bow in a separate post..

Preparation Time : 10 mins
Baking Time : 25 to 35 mins
Makes : a two layered 18 cm cake

Ingredients :

All Purpose Flour / Maida - 1 3/4 cup / 210 grams
Sugar - 3/4 cup / 150 grams
Baking Soda / Cooking Soda - 1/2 tsp
Baking Powder - 1 tsp
Banana - 1 cup pureed
Pineapple - 1/2 cup pureed
Milk - 1/4 cup / 60 ml
Vegetable Oil - 1/2 cup / 120 ml
Chocolate Butter Cream - 1 batch (Recipe here)

(My 1 cup measures 240 ml)

Method:

Preheat oven to 180 degree C.


Take two 18 cm round baking pan and grease it with oil and dust it with flour and coat on all sides. Tap of the excess and set aside.

Take flour, baking soda, baking powder in a sifter and sieve well. Set aside.

Take oil, sugar, banana puree, pineapple puree and mix well till combined.

Now add in 1/2 of the flour mix in and add in milk. Fold gently.

Add remaining flour mix in and fold gently.

Divide this between two baking pan and spread evenly.

Bake for 25 to 35 mins untill the cake is cooked, insert a toothpick to check whether the cake is baked or not, if it comes out clean then the cake is cooked.

Let it cool in the cake pan for 15 mins. invert it onto a wire rack and cool it down completely.

Now place a cake on a plate and surround it with parchment paper or foil. Spread chocolate buttercream over it and spread evenly. Place another cake on top and top with some more buttercream, spread it evenly on top and the sides. Smooth the icing well.

Put it in fridge for 15 mins to set.

You can cover the cake with fondant or have it as it is..

Take your ingredients

in a bowl, take oil


sugar


banana puree


pineapple puree


mix well


add in half of the flour


fold gently


add in milk


and the remaining flour


fold gently


Divide the batter between two cake pans


Bake them


Invert it to a plate and cool completely

I placed a cake on a plate that is covered with strips of foil..
you can use parchment too, i ran out of it


dollop some frosting on top


spread it evenly


top with the second layer


spoon some more frosting on top


spread evenly


once the top is covered


spread the sides too


now smoothen the frosting as you can


chill for 15 mins ..i wanted to cover this with fondant,
 so i chilled it overnight


i covered the entire cake with fondant, will share it in a
 separate post..
Slice and serve..The cake was so moist and flavourful..

  1. Hi Aarthi - I was looking for a Banana Cake recipe and after searching in your blog, I decided to try out this one, minus the pineapple part as the other banana cake recipe was for 2 cups of flour and I just needed to make a small cake.

    It came out so soft and delicious. I just added an extra 1/4 cup of milk in order for the batter to be of better consistency.
