Adai Aviyal Recipe - Adai Avial Recipe - South Indian Adai with Aviyal Recipe

Amma makes a huge batch of dosa batter each weekend which will last us for that whole week..For grinding this, she uses a old fashioned big wet grinder which we are having for more than 25 years..While she plan to grind dosa batter, she also make appam batter and ada batter in the same day to prevent less washing of dishes..Sometimes she makes vada batter too..

This is one of her special ada recipe..If you are people who are not aware of this delicious Indian crepes..It is just a combo of rice and lentil crepes which is spiced up a little..I highly recommend you guys to try this...The ada batter can be made in blender as well, she normally serves it with coconut chutney. But some days she makes avial to go with it.

So hope you like it and let me know what you think..So off you go to the step by step recipe with pictures..


For Batter:
Rice - 1
Toor Dal / Tuvaram Paruppu - 1/2 cup
Urad Dal / Ulundam Paruppu- 1/4 cup
Green Gram - 1/4 cup
Salt to taste
Red Chilli Powder - 1 tblspn or to taste
Water as needed
Onion-1 chopped finely
Green Chilli - 2 chopped
Ginger - 1 tblspn finely chopped
Curry leaves 
Coriander leaves a handful finely chopped

For Avial:
Raw Banana / Vazhakai- 2 peeled cut lengthwise
Brinjal / Kathirikai- 1/2 cup cut lengthwise
Carrot - 1/2 cup cut lengthwise
Elephant Yam / Chena Kizhangu- 1/2 cup cut lengthwise
Cucumber - 1/2 cup cut lengthwise
Pumpkin - 1/2 cup cut lengthwise
Curry leaves a sprig
Turmeric Powder / Manjal Podi - 1.5 tsp
Salt to taste
Water - 1/2 cup
Thick Yogurt / Curd - 1/2 cup

For Grinding:
Coconut - 1 cup grated     
Green Chilli - 2 
Cumin Seeds / Jeerakam - 1 tsp ( i used powder)
Shallots / Sambar Onion / Chinna Ulli - 4

For Tempering / Seasoning:
Coconut Oil - 2 tblspn
Mustard Seeds / Kaduku - 1 tsp
Curry leaves - 1 spring


Soak Rice and Dal for 3 hours in water...Now drain this and make into a smooth paste ( not so smooth) by adding some water.

Take it in a bowl,Add some salt, chilli powder and mix well.Now add in chopped onion and green chilli, asafoetida, ginger, curry leaves, coriander and mix well. Set this aside till you make the avial.

Grind all the ingredients given in the list to a little coarse paste without adding any water. Set this aside till use.

Take all vegetables in a thick bottom pan. Sprinkle in 1/2 tsp of turmeric  powder, salt and curry leaves and mix well. Add in water and press the vegetables with your hands so everything is well immersed.

Cover this with a lid and bring it to a boil. Simmer this for 15 mins till the vegetables are done.

Now add in the ground masala and mix well.Cook this for 5 mins.

Take it off the heat and add in yogurt and mix well. 

Now make seasoning. Heat oil and crackle mustard seeds and curry leaves. Pour this over the avial and mix well.

Now for making ada dosa. Heat a tawa and take a ladleful of batter and spread it thinly on the tawa.Drizzle oil on the edges and cook for couple of minutes until light golden.Now flip it over and cook on under side too..Remove this and store in a hot case.

Serve with avial.

First soak rice along with dal for a good 3 hours.

drain it and add it to a blender

puree to a little coarse batter

take it in a bowl

add in salt and chilli powder

mix well

prepare all your ingredients to go into the batter

add it in

mix well..set this aside..

Now lets make avial..

prepare all the veggies

take coconut in a blender

add in cumin powder and green chillies

add in shallots

turmeric powder

make it into a coarse paste
now take veggies in a pot

add in salt and turmeric powder

add water

top with some curry leaves

cover with a lid and let it cook

now it is done

add in the ground masala

Mix that completely

take it off the heat and add in yogurt

mix well

heat oil in a pan, add in mustard seeds and curry leaves

pour it in

mix well...avial done

make ada dosa...pour a ladleful of batter in a hot tawa and make dosa, drizzle oil around the sides

flip over when golden brown

Serve with avial..
