Banana Cinnamon Muffins Recipe / Banana Muffins Recipe / Banana Cinnamon Muffins with Cinnamon Sugar Topping

What
to say about this, it is so buttery with a crunchy muffin top and a fluffy and
moist inside. All like a perfect muffin. This muffin is so easy to whip up,
just mix few ingredients together in a bowl and you have a delicious muffin
batter. I mixed up the dried ingredients and wet ingredients separately but you
can mix all of them in the same bowl. It would turn just perfect. 

I made this muffins yesterday along with my mango muffins. It was  a total hit at home. I nowadays i feel like baking whole lot of muffin recipes, because of its simplicity. You dont need heavy gadgets or lots of ingredients to make this, just few stuffs thats it you have a yummy desert on hand. I love to have this muffins along with a glass of milk, yum..


There is a warning for you, if you decide to bake this, you are warned to close all the doors and windows. Because the smell of cinnamon will just call up all your neighbours to visit your house..So please give this a try and let me know how it turned out for you..




Preparation Time : 10 mins
Baking Time : 25 to 30 mins
Makes : 6 Muffins


Ingredients:

Ripe Banana – 1 large mashed (around 1 cup)
Granulated Sugar – 1/2 cup / 100 grams
Oil – 1/4 cup / 60 ml ( I used Refined Oil)
Egg – 1
Vanilla Essence -1  tsp
All Purpose Flour / Maida – 1 cup / 120 grams
Baking soda – 1 tsp
Salt – 1/4 tsp
Cinnamon Powder – 1 tsp
Milk – 1/3 cup / 80 ml 


For Dipping & Topping: 
Granulated Sugar – 1/4 cup / 50 grams
Cinnamon Powder – 1 tsp
Butter – 4 tblspn melted

Method:

Preheat oven to 180 degree C. Line a 6 Cup Muffin tray with cupcake cases and set aside.

In a bowl, mix flour, sugar, baking soda, cinnamon powder and salt. Set aside for a min,

In a jug or another bowl, mix mashed banana, oil, egg and vanilla. 

Now pour the wet ingredients on top dry and mix well. Add in milk to make a thick mixture.

Now use a icecream scoop to divide the batter between the lined cupcake cases.

Bake it in oven for 25 to 30 mins. 

Remove from oven and let it cool a bit. 

Now make the topping. Melt butter and set aside, mix sugar and cinnamon and set aside.

Now take the warm muffins and dip the top in melted butter and drench it in cinnamon sugar. 

Do the same to all muffins.

Serve warm.

Take all your ingredients

Take flour in a bowl

Add in sugar

Add a touch of cinnamon powder

Some baking soda

some salt

give this a good mix

Mash a large banana roughly, i use a fork to do this

Add in a egg

Add in oil

Add in vanilla 

Mix this up
pour this over the dry mix

Add in milk

Mix well

Line a muffin tray with muffin cases

Now the mix is ready

Use a icecream scoop

scoop some batter

divide it between the tray

baked..See perfect muffin top

Now take some butter , sugar and cinnamon

Now we are gonna make cinnamon sugar

your cinnamon sugar is ready..how easy is that..

now melt some butter

Take a muffin

Dip it in butter

All drenched

Now dip it in cinnamon sugar

beautiful

Enjoy

    @Anonymousyes u can use wheat flour, but it do result in a little dense cake, but taste will be good.

    You can add couple tblspn of curd instead of egg.

    I tried it. Taste was gud but i did not get a brown crust on top. Mine left with soft. What would be the reason? I didn't add milk bcz i got the consistency without milk itself. Added little baking powder too. Baked for 20min and toothpick inserted got clear one

    I tried dis receipe n it reallyyy camevout awsomme.jus lovd it.i also made muesli as per ur receipe n it was simpl superb.i cnt imagune dat v cud mak mueslu at hom.so healtht.hw evr pls post me d link of muesli as m nt able to find.i want to pendown d pproper rwceipe.thanku soo much

    This looks so delicious.Will definitely try it ! Shld i just double the entire ingredients if i want to make more muffins? say about 12? And do i have to preheat again, before baking the next batch?

      U can use silicone muffin cups, or take small steel containerand line it with foil and use

    Hi Mrs Aarti,I tried your banana cinnamon muffin,as I had limited liners I baked it batch wise, first batch was super soft but the second was not as the first one, should I refergerate the batter.

    I tried this recipe it was delicious,I had to bake in 2 batches as I had limited liners,the first first batch was super soft and delicious but the second was not as the first ,I didn’t refrigerate the batter it was out untill I baked the 1st batch
