As promised i am sharing you the granola muffins which i made using my homemade muesli / granola. This is one of nigella lawsons recipe and i am telling you, it was delicious, tasted so healthy and as nigella says cereal in a cake, how can that be bad.
This recipe is quite simple, just mix few things together and there you have a lovely muffins. The orginal recipe calls for brown sugar, but i added my trusty jaggery, i always add jaggery when a recipe calls for brown sugar, it do the job perfectly.
The muffin had a perfect muffin top and a crusty top, moist interior delicious..I can give you one idea, if you want a chocolate flavoured muffins just remove a tblspn of flour and add cocoa powder.
Preparation Time : 10 mins
Baking Time : 20 to 25 mins
Makes - 6 large muffins

Ingredients:
All Purpose Flour / Maida - ¾ cup / 90 grams
Egg - 1
Baking Soda - ½ tsp
Brown Sugar / Jaggery - ½ cup packed
Oil - ¼ cup / 60 ml ( I used Refined Oil)
Method:
Preheat oven to 200 degree C.
Grease a silicone muffin pan with oil, or line a muffin case with cupcake wraps.
Take flour, baking soda in a bowl and mix well. Take egg, curd, brown sugar, oil in a jug and mix well, till it is completely melted.
Now pour this over the flour mix and gently fold, dont over mix.
Now add in granola mix and fold gently.
Take a icecream scoop, scoop the muffins into pan and bake it for 20 to 25 mins.
Now remove them from oven let it cool and invert them to a cooling rack.
Serve warm with a cup of milk or coffee
