    Granola Muffins Recipe

    As promised i am sharing you the granola muffins which i made using my homemade muesli / granola. This is one of nigella lawsons recipe and i am telling you, it was delicious, tasted so healthy and as nigella says cereal in a cake, how can that be bad.

    A muffin is an individually portioned baked product, but the term can refer to one of two distinct items: a part-raised flatbread baked and then cooked on a griddle, or a quick bread chemically leavened and baked in a mould.

    Granola is commonly regarded as a healthy breakfast cereal. Its a toasted mixture of rolled oats, nuts, and a sweetener like sugar or honey, though other grains, puffed rice, dried fruit, seeds, spices, and nut butters can also be included.

    I love baking muffins more than anything else. Not only because it is easy to make, but it makes a great thing to have as morning breakfast. I am not a big morning person, but i like to enjoy a warm muffin in the morning along with a cup of tea, coffee or in my case a cup of green tea.

     

    This recipe is quite simple, just mix few things together and there you have a lovely muffins. The original recipe calls for brown sugar, but i added my trusty jaggery, i always add jaggery when a recipe calls for brown sugar, it do the job perfectly.

    Ingredients for Granola Muffins Recipe

    • All Purpose Flour / Maida - ¾ cup / 90 grams
    • Granola / Muesli - 1 cup
    • Egg - 1
    • Baking Soda - ½ tsp
    • Curd / Yogurt - ½ cup
    • Brown Sugar / Jaggery - ½ cup packed
    • Oil - ¼ cup / 60 ml ( I used Refined Oil)
     
     

    The muffin had a perfect muffin top and a crusty top, moist interior delicious..I can give you one idea, if you want a chocolate flavoured muffins just remove a tblspn of flour and add cocoa powder. 

    How to make Granola Muffins Recipe

    1. Preheat oven to 200 degree C.
    2. Grease a silicone muffin pan with oil, or line a muffin case with cupcake wraps.
    3. Take flour, baking soda in a bowl and mix well. Take egg, curd, brown sugar, oil in a jug and mix well, till it is completely melted.
    4. Now pour this over the flour mix and gently fold, dont over mix
    5. Now add in granola mix and fold gently.
    6. Take a ice cream scoop, scoop the muffins into pan and bake it for 20 to 25 mins.
    7. Now remove them from oven let it cool and invert them to a cooling rack.
    8. Serve warm with a cup of milk or coffee

    Ingredients

    Take all your ingredients
     
    Homemade granola
     
    Take flour in a bowl
     
    add baking soda
     
    mix well
     
    now lets make the wet batter
     
    break a egg
     
    add curd
     
    add oil
     
    brown sugar
     
    mix well till sugar is melted
     
    pour this into the dry ingredients
     
    mix well
     
    add granola
     
    fold gently
     
    i oiled a silicone muffin pan
     
    use an ice cream scoop to scoop the batter
     
    divide it evenly
     
    time to bake
     
    I place it in the center rack
     
    all golden
     
    Serve warm

      These were delicious! I’m not certain what curd is, and didn’t have yogurt, but sour cream worked really well. Also, baked at 400 degrees F - mine took 18 minutes.
      Thanks for a great recipe- I’m already thinking of variations I can make😋
