    About Bean Soup

Spicy kidney bean soup is a warm, hearty soup loaded with flavours. It tastes so rich, creamy and incredibly easy to make. The whole recipe comes together in under 30 minutes and using an immersion blender makes it quick and effortless. Because you can blend the soup in the same pot, without any mess and give the soup that smooth, creamy finish in seconds.

The main star of the recipe is kidney beans, as they are high in protein, fiber and iron. The kidney bean blends beautifully to create a smooth textured soup without using any cream. This healthy nutritious soup keeps you full for a longer run and it is good for everyone in the family.

The soup tastes great with a side of garlic bread, toasted bread, sourdough, or even with a salad. Making it a wholesome meal for lunch or dinner.

These are some of the other healthy soup recipes on my blog to try during these warm days

Chicken and vegetable soup : This is a healthy and filling protein rich soup made with chicken, carrot, capsicum and chicken stock. It tastes great with garlic bread or toasted bread.

Cream of mushroom soup : This is a light and creamy soup made with mushrooms, garlic, butter, onion and flour. Serve hot with bread or a bowl of salad.

Hot and sour chicken soup : This is a popular spicy and tangy soup packed with flavours. It is made with garlic, chicken, mushroom, broth and a whole lot of vegetables. Perfect for this cold weather and serve hot with toasted bread, wontons or spring rolls.

    Ingredients

Olive oil : I have used 2 tablespoons of olive oil to saute the onions, garlic and spices. It helps to soften them and adds a mild flavour. If you don't have olive oil, opt for regular cooking like canola oil, vegetable oil or even butter.

Garlic : I have added 2 cloves of finely chopped garlic. This is an essential aroma for any soup and acts as a base flavour.

Onion : I have used 1 medium sized onion. This adds body to the soup and gives mild sweetness when sauteed.

Spices : Spices like coriander powder ( 2 teaspoon ) , cumin powder ( 2 teaspoon ) , red chilli powder (1 teaspoon ) and black pepper powder ( 1 teaspoon ) are added to give color and the spicy kick.

Tomato puree : I have used 1 cup tomato puree. This gives the body, texture and tanginess to the soup. You can use fresh or canned tomato puree.

Kidney bean : The main ingredient of the soup. It is high in protein and makes the soup rich and creamy when blended.

Vegetable stock : I have added 3 cups of homemade vegetable stock. This acts as the body of the soup and adds a rich umami flavour.

    Expert Tips

    • If you prefer to keep the soup chunky, blend only halfway and leave the rest as it is.
    • You can also add fresh tomatoes instead of canned tomato puree.
    • At the end, add parsley or lemon juice for extra flavour.
    • Top the soup with bread crouton or corn chips for extra crunch.
    • You can add other vegetables like carrots, potatoes, corn, and capsicum for more nutritious soup.

    Storage & Serving

Transfer the leftover soup to an airtight container and it stays well in the refrigerator for 3 to 5 days. Reheat the soup using a microwave.

Serve this delicious and healthy kidney bean soup with toasted bread, sourdough bread, garlic bread, bread croutons or with a simple salad. It will make a hearty and comforting meal.
