    Fruit Cake Brownie Recipe

    If you love the warm flavour of a classic Christmas fruit cake, but don't want to wait for long soaking or forget to soak the fruits, then I got you covered. This fudgy fruit cake brownie gives you the same Christmas flavour, but with an easy method. It is made with dried fruits, rum, sugar, butter, flour, eggs and chocolate. This brownie is so rich and tasty, making it perfect for parties and festive gifting.

    Each year for Christmas i used to bake a fruit based recipe for blog. When i was thinking what to bake for this year, i decided to go with a brownies recipe. And guess what this brownie turned out super duper delicious.

    The brownies is filled with delicious juicy fruits soaked in rum. Normally we soak the fruits in rum few months in advance, atleast a week or two days in advance for maximum flavour. But i took the instant step and boiled it in rum for a couple of mins till it gets soft. I then added it in the brownie batter. The brownie batter itself is very fudgy and moist. Super tasty.

    About Fruit Cake Brownie

    Fruit cake is a traditional Christmas treat, whereas brownie is a classic dessert loved by everyone around the world. What if I tell you that we can combine both these recipes together to create a delicious, gooey, fudgy brownie full of holiday flavour. 

    This recipe combines the taste of Christmas fruit cake and the rich texture of fudgy brownie. Without a long soaking time, this brownie can be made instant, just mix all the ingredients like rum, fruits, egg, flour, butter, chocolate and sugar and bake. 

    This brownie recipe is perfect for those who want to make quick fruit cakes during the holiday season. Serve this brownie warm with or without ice cream and you'll feel the classic Christmas vibe in every bite.

    Variations

    Eggless fruit cake cupcake : This is a cupcake version of Classic fruit cake, that too made without eggs. It is so soft, moist and made with sugar, butter, yogurt, orange juice, soaked dried fruits and flour. These cupcakes can be enjoyed as a tea time snack or perfect for gifting during the holiday season. 

    Caramel fruit cake : This is a rich and dark fruit cake made with caramelized sugar, eggs, sugar, butter, soaked dried fruits and flour. 

    Eggless fruit cake cookies : This is a soft and chewy delicious cookie loaded with dried fruits and lots of flavour. Perfect for kids snack boxes and also for gifting.

    Ingredients

    Mixed fruits : I have used raisins, dates and prunes. This adds the natural sweetness and a rich, chewy texture in the brownie. 

    Rum : Rum gives the classic fruit cake aroma and intensifies the flavour of the brownie.

    Eggs : Eggs are the star ingredient in the brownie. They give a soft textured and fudgy brownie all the time. If you want to make it eggless, check my eggless brownie recipe. 

    All purpose flour / Maida : All purpose flour is the base of the brownie and it gives the perfect structure. But you can also swap with whole wheat flour or any millet flour of your choice. 

    Unsalted butter : Use unsalted melted butter for making brownies. It gives a rich taste and smooth texture. Don't use salted butter or oil for making. 

    Vanilla extract : Use good quality pure vanilla extract. This adds a warm aroma that balances the rum and chocolate flavour. 

    Sugar : This is purely added for the sweetness. Instead, you can add brown sugar, coconut sugar or honey. 

    Dark chocolate : Use a good quality dark chocolate bar. This gives the brownie a dense and fudgy texture. Mild bitterness in the dark chocolate blends beautifully with the rum and fruits

    FAQ 

    Q. What can be substituted for rum ? 

    If you want to make a non alcoholic version, soak the fruits in orange juice, lemon juice or in water. 

    Q. Can I add nuts to this batter ? 

    Absolutely ! You can add chopped nuts like almonds, cashews, pistachios or walnuts. This will add a nice crunchy texture. 

    Q. Do I need to soak the fruits overnight or a month ? 

    No, this fruit cake recipe doesn't require a long time soaking. Just boil the fruits of your choice in rum for a minute and turn off the stove. The flavours of fruit and rum enhance over the baking time. 

    Expert Tips

    • Chop the fruits like dates, raisins and prunes into fine pieces. So that it will easily blend with brownie and you get to taste the fruits in every bite. 
    • Don't overboil the rum and fruit mix. Overheating may affect the overall taste and texture. 
    • If you don't have prunes or other fruits, you can use figs, tutti frutti, cherries, cranberries, apricots or nuts. 
    • Don't over bake the brownies, otherwise it will look like a cake and get hard. 
    • No oven, no problem. You can bake this batter using a pressure cooker, air fryer or in a heavy bottomed pan.

    Storage & Serving

    Once the brownie is baked, cool them completely and slice it. Transfer them to an airtight container and refrigerate for a week. Warm them for 10 to 20 seconds using a microwave. 

    Serve the warm fudgy fruit cake brownie with a scoop of ice cream, hot chocolate fudge or chocolate icing. Or it can be enjoyed warm on its own as well. 

    Step by Step Pictures

    1)Take dry fruits in a sauce pan. I used raisins, dates and prunes.

    2)Add rum or any liquor. I used baileys.

    3)Mix well

    4)Boil it and set aside to cool.

    5)Take butter in a microwave safe bowl.

    6)Add in dark chocolate.

    7)Melt it microwave.

    8)Stir till smooth

    9)Add sugar.

    10)Add eggs.

    11)Add in vanilla extract.

    12)Mix well

    13)all purpose flour

    14)Add salt

    15)Fold gently

    16)Add in dry fruits along with rum

    17)Mix well

    18)I lined a pan with parchment paper

    19)Pour it in

    20)Bake till done

    21)Slice and serve

    Equipment

    • 18 cm square cake pan

    Ingredients
      

    • 1 cup Mixed Fruits Raisins, dates and prunes
    • ¼ cup Rum
    • 2 large Eggs
    • ½ cup All Purpose Flour 60 grams
    • 5 tablespoon Unsalted Butter
    • 1 teaspoon Vanilla Extract
    • ½ cup Sugar 100 grams
    • 100 grams Dark Chocolate chopped

    Instructions
     

    • Preheat oven to 180 degree C. Line a 18 cm cake pan with parchment and set aside.
    • Take dry fruits in a sauce pan. Add in rum and boil it for a min. Set aside to cool.
    • Take butter and chocolate in a bowl and melt it in microwave for 1 min till chocolate is melted. Mix well so it cools.
    • Add in sugar, eggs, vanilla and mix well till combined. Add in flour and fold gently. Add in cooled fruit mix and mix well.
    • Spoon into pan and bake for 25 to 30 mins.
    • Cool completely. Slice and serve.
