Did you all came across the review which I posted earlier about the book Gujarati Kitchen. If not check it now here. This recipe is from her cookbook..When I was reading that book, I came across this recipe which got my immediate attention because of its simplicity..I made this sabzi immediately and result was wow..

This subzi get its unique flavour and taste from the fresh masala which we add..Making that masala is wicked easy, it just calls for few fresh stuffs which are readily available in each and every household. You could make this masala in bulk and store it in freezer for easy access..This can be served with either rice and dal or with hot roti..
I hope you all like it and let me know what you think..
Ingrediants:
Ladysfinger / Okra / Vendaikai – ½ kg chopped
Potato – 3 large chopped
Cumin Powder / Jeera Powder -1 tsp
Coriander Powder / Malli Podi -1 tblspn
Chilli Powder -1 tsp
Turmeric Powder / Manjal Podi – ½ tsp
Mustard Seeds / Kaduku -1 tsp
Fenugreek Seeds / Methi / Vendayam -1 tsp
Salt to taste
Oil-1 tblspn
For Fresh Masala:
Ginger –  2 tblspn
Garlic – 2 tblspn
Green Chilli – 1
Lemon Juice – 2 tsp
Turmeric Powder / Majal Podi – ½ tsp
Oil- 1 tblspn
Method:
Start by making Fresh masala..Grind ginger, garlic, green chilli and turmeric together to a smooth paste. Transfer to a bowl and add lemon juice and oil. Mix well..This is Fresh Masala.
Now make subzi. Heat oil and add mustard and fenugreek seeds.
Add potato and ladysfinger and mix well. Add salt and mix well.
Now add in chilli, coriander, turmeric and cumin powder. Toss well..
Add the fresh masala and mix well.. Cover and cook for 10-15 mins..Now open the lid and cook for 5 more minutes.
Serve hot with rice or roti.
Pictorial:
Start by making Gujarati Fresh Masala
Take ginger, garlic green chilli and turmeric in a blender
and blend it
Transfer to a bowl
add some lemon juice
and oil
mix well
Now take all ur ingrediants for subzi
Prepare ur veggies
heat oil
add mustard & fenugreek
add potatoes
and okra
mix well
add salt
cumin and coriander
chilli and turmeric
fresh masala
and mix well
cover and cook
till potatoes are done.
Serve
Taste great with Rice

    wow that is nice.. i do make bhindi sabzi with aloo but never used the masala like this. the pulao on side is looking yummy too, do u have recipe of the pulao on side.. yummy dish

    Should we add water while.cooking potatoes…and how long does it take for potatoes to be cooked coz I hav always cooked potatoes in pressure cooker

    @ponnu rusthamNo u dont have to add water, just cover it and cook it on a low heat. Potatoes will be done in 15 mins.

    Won't the stickiness come out of the bindi while frying. What should we do for that?
