Ingredients:
Eggplant / Brinjal - 1 large
Oil as needed for shallow frying
For Batter :
Gram Flour / Besan / Kadalai Mavu - 1 cup
Rice Flour / Arisi Mavu - ½ cup
Chilli Powder - 2 tsp
Coriander Powder / Malli Podi -2 tsp
Coriander Powder / Malli Podi -2 tsp
Turmeric Powder / Manjal Podi - ½ tsp
Cumin Powder / Jeera Podi - 1 tsp
Amchoor Powder / Dry Mango Powder - 1 tsp
Salt to taste
Water as needed

Method:
Slice eggplant into thin slices.
Mix the batter ingredients to a smooth batter. the batter should be little thin, but not too thin.
Heat oil for shallow frying, dip the eggplant slices in the batter and fry till golden on both sides.
Drain on to some paper towel.
Serve.

now add in some amchoor powder |
Pour in water |
Make it into a smooth batter |

dip it in the batter |
Heat oil in a tawa |
place the brinjal slices in |
fry it for few mins on medium heat till the bottom is cooked |
flip over and cook |
drain onto a paper towel |
Serve |

Thanks! I added garlic and onion for added flavour. Came out wel. How can I maintain the crisp? It becomes soft after it cools down although I didn't cover it.

@Anonymousit does gets soft as it cools. You can try adding some cornflour in it too
