    Caramel Rava Pudding Recipe

    Sooji pudding or rava pudding which is similar to caramel custard. This pudding has a texture to it with the addition of sooji or rava in it.

    Normally caramel custard is so smooth which just melt in mouth. But this one has a texture in the custard from the sooji which is just perfect.

    How to Make Caramel Rava Pudding

    • Take sugar, water in a sauce pan. Cook till it gets golden and caramlized. Now pour this into the square pan.
    • Take milk in the same sauce pan, add sugar and bring it to a boil. Add in sooji and cook for 2 to 3 mins.
    • Now add ghee and mix well. Set aside for 5 mins.
    • Now take eggs, vanilla in a bowl and mix well.
    • Pour egg mix into the sooji mix and whisk well.
    • Pour this sooji mix into the caramel.
    • Take a kadai. Place a small plate in the bottom. Fill water half way through the pan.
    • Now place the pan into the kadai. Cover and steam for 20 to 30 mins on medium flame.
    • Insert a knife to see whether the pudding is cooked.
    • Now pop this in fridge and leave to set for 2 hours.
    • Now unmould and slice.
    • Serve.

    Ingredients

    FOR CUSTARD:

    • Milk - 500 ml / 2 cups
    • Sugar - ⅓ cup
    • Eggs - 2
    • Vanilla Extract - 2 tsp
    • Sooji / Rava - ¼ cup
    • Ghee - 2 tsp

    FOR CARAMEL:

    • Sugar - ½ cup
    • Water - ¼ cup

    Instructions

    Notes

    1)Dont add too much sooji.
    2)Add more vanilla extract to reduce the egg smell.
    3)Add egg mix when the sooji has cooled a bit, else it will scramble.
    4)Cool it completely for 3 to 4 hours before unmoulding.
    5)Store in fridge for 4 to 5 days.

    Caramel Rava Pudding With Step by Step Pictures

    1)Take a pan. I used a square pan.

    2)Take sugar and water in a sauce pan

    3)Cook till it gets caramelised.

    4)Pour caramel into the pan.

    5)Set aside.

    6)Take milk in the same pan

    7)Add in sugar

    8)Add in sooji / rava

    9)Mix and cook for 2 to 3 mins.

    10)Add in ghee

    12)Mix well

    13)Take eggs in a bowl

    14)Add in vanilla

    15)Mix well

    16)Add egg into the sooji mix.

    17)Whisk till combined.

    18)Pour it into the caramel pan

    19)Like this.

    20)Place the pan over a pan of simmering water

    21)Cover and steam on low medium flame for 25 to 30 mins.

    22)Done

    23)Cool it for few hours in fridge.

    24)Run knife around the sides.

    25)Place a plate on top.

    26)Invert

    27)Unmould carefully

    28)If you want more caramel for serving. place the pan over the heat and cook for few more mins. Add little water if needed

    29)Mix well till all caramel is liquidy.

    30)You can serve this with pudding.

    31)Slice and serve.

      Is vanilla extract and vanilla essence both are same?

        extract is much pure form of vanilla. essence would be flavouring. Anything you can use

      Hi, I am a vegetarian, hence we don't use egg as well. May I know if there is any other substitute to egg, to use in this caramel rava pudding please. Thanks.
