Mutton Sukka Recipe is a popular mutton recipe made with coconut oil, whole spices, onions, spices and coconut cooked until it is dry and thick like a masala. This mutton sukka is also known as mutton chukka which is a dry and spicy masala coated mutton preparation just like my mutton roast.

Mutton sukka is one of our family favorite. I make them quite often and everyone in the family loves it. For me a proper mutton sukka should have a thick spicy masala coating on top which is achieved by the addition of roasted gram dal powder and coconut.

About Mutton Sukka | Mutton Chukka Recipe
Mutton chukka is probably the most famous recipe around the world. It is one of the popular recipe made using mutton or lamb. "Sukka or chukka" means "dry curry". It is seriously addicting side dish for parotta or roti. We love to have it with rasam rice.
This is an authentic mutton sukka preparation from chettinad region. It uses onions, garlic, spices, freshly ground coconut paste to make the sukka.

Mutton sukka preparation starts with pressure cooking mutton with spices. I like to use my pressure cooker for cooking mutton. Depending on the tenderness of the cut of lamb used, the cooking time might vary.
Once the mutton is cooked, there will be some cooking liquid left in the pressure cooker. For creating the sukka part, you have to dry the cooking liquid and make the dish dry.
I like to use coconut oil to make the sukka, saute onions, garlic, chillies and curry leaves. Add the cooked mutton with the masala, along with coconut paste and roast the mutton to create the mutton sukka effect.
I like to use coconut roasted gram dal powder which is added in the mutton to make it dry. This spicy Mutton sukka is best served with rice, roti, pulao or biryani.

Mutton Sukka Ingredients
- Mutton - use tender cuts of lamb or mutton for this dish. I prefer to use boneless mutton and some with bones-in.
- Spice powders - I used red chilli powder, coriander powder, turmeric, garam masala powder when cooking mutton.
- Onion - sliced onions is used for tempering. Peeled and chopped shallots can be used.
- Ginger & Garlic - lots of ginger garlic adds flavour.. You can use choppped garlic when tempering.
- Green Chillies -green chillies adds flavour and slight heat.
- Curry leaves - use a handful of curry leaves for tempering. it adds so much flavour.F
- For Sukka Masala - coconut, roasted gram dal, fennel, cumin and black pepper is ground and added to cooked mutton to create sukka.
- Coconut oil & ghee - coconut oil is used in sauteing the onions, while ghee is added in the end while roasting.

Step by Step Pictures
Sukka Masala
1)Take coconut, roasted gram dal, black pepper, cumin seeds and fennel seeds in a blender.

2)Grind them without adding any water. The mixture should be coarse in texture.

Cooking mutton
3)Take mutton pieces, ginger garlic paste, chilli powder, coriander powder, garam masala powder, turmeric powder and salt in a pressure cooker.

4)Pour in enough water to cover the mutton. Mix well.

5)Pressure cook mutton for 6 to 8 whistle. Turn off the flame and let the pressure release by itself. Once the pressure is released. Open the pressure cooker and check whether the mutton is cooked or not. if it is not cooked, you can cover the cooker again and cook for few more whistle.

6)Now the mutton is cooked, I like to place the cooker on heat and dry out any excess liquid.

Make Tempering
7)Heat coconut oil in a pan. Add in chopped garlic, sliced onion, curry leaves and slit green chillies.

8)Saute for 2 minutes.

9)Add in the cooked mutton with any excess masala.

10)Mix that really well with the onion and garlic mix.

Sukka Part
11)Now add in the ground coconut mixture.

12)Along with a tablespoon of ghee, now we are going to roast this mixture really well to create sukka.

13)Mix this well and reduce the heat to low medium and cook until the masala is well roasted.

14)Add in coriander leaves and lemon juice. Toss well.

15)Mutton Sukka is ready to enjoy.

Expert Tips
- Make sure you use coconut oil for cooking mutton sukka for better flavour. Ghee in the end while roasting adds so much flavour.
- Depending on how tender the mutton is, the cooking time will vary. So adjust accordingly. Don't over cook the mutton else it may fall apart.
- Add lots of curry leaves, garlic for taste and aroma.
- You can use sliced shallots instead of onions.
Serving & Storage
Mutton sukka taste best when served piping hot with any main dishes. Enjoy with hot rice, or with parotta or roti. Leftovers can be stored in fridge and reheated before serving.

Mutton Sukka Recipe (Chettinad Mutton Chukka Recipe)

For Tempering
- 3 tablespoon Coconut Oil
- 1 large Onion peeled & sliced
- 2 no Green Chillies Slit
- 6 cloves Garlic peeled and chopped
- 2 Sprig Curry Leaves
- 1 tablespoon Ghee
Sukka Masala
- ½ cup Fresh Coconut
- 1 teaspoon Fennel Seeds
- 1 teaspoon Black Pepper
- 1 teaspoon Cumin Seeds
- 2 teaspoon Roasted Gram Dal peeled
For Cooking Mutton
- 500 grams Mutton (Lamb)
- 1 teaspoon Turmeric Powder
- 1 tablespoon Kashmiri Chilli Powder
- 1 tablespoon Coriander powder
- 1 teaspoon Garam Masala Powder
- 2 tablespoon Ginger Garlic Paste
- Salt to taste
- 1½ cup Water or adjust
Finishing Ingredients
- ½ no Lemon or to taste
- 3 tablespoon Coriander leaves chopped finely
Instructions
- Sukka Masala - take coconut, roasted gram dal, cumin, black pepper and fennel seed in a blender and grind them without adding water to a coarse mixture. Set aside.
- Pressure cooking mutton - Take mutton in a pressure cooker, add chilli powder, coriander powder, turmeric, salt, garam masala powder, ginger garlic paste and water. Mix well. Cover and pressure cook for 8 to 10 whistle. Depending on size and quality of mutton cooking time will vary.
- Once pressure is released, open the cooker. if there is lots of water left, place the cooker on heat and dry out the excess water. The mixture should be like a masala.
- Tempering - Heat coconut oil in a kadai. Add in garlic, sliced onions, curry leaves and green chillies and saute for 2 minute. Add in the cooked mutton with any leftover masala. Mix this really well.
- Make Sukka - Now add in the ground coconut masala, along with ghee into the mutton. Toss it really well and reduce the flame to medium low. Cook for 4 to 5minutes tossing often to create sukka effect.
- Finishing touches - once the mutotn sukka is well roasted, add in lemon juice and coriander leaves. Toss well and it is ready to serve.

hi..i wanted to have mutton chukka for a very long time....but cudn find it anywhere else so gud as in anjappar hotel...am in bangalore...and i found it difficult to get a gud chukka varuval...so i thought why dont i tahe the help of internet do it by myself...so..i tried it as said ..came out very well....my hubby loved it so much...he usually resists to eat mutton b'cos of the fatty stuff....but cudn resist eating it since it was amazingly tasty...

Hi, this is chettinad mutton varuval. Sukka varuval is only with 3 ingredients. Small Onion, Red chillies and Mutton. You can add curry leaves finally if needed..
