    Chicken Meatball Soup

    Last Night we thought of making some soup for dinner, since hubby had a little cough. So i thought to making a warm chicken soup for him. I ran out of chicken pieces, but had only some burger mix which made few days back and freezed it. So decided to make meatball soup with it and infuse lots of ginger and garlic in it. So i made a little medicinal kind of soup, and added lots of pepper in it. It was so filling and satisfying.

    I took the mince mixture and shaped into mini meatballs. I seared them in a tsp of oil and cooked them completely. Then i dropped them in the soup. I didn't have any veggies on hand, so i added only some carrots. If you want you can add lots of veggies in this too or make it very clear soup neglecting them. Hope you will try this and let me know how it turned out.

    Cooking Time : 30 mins
    Serves - 2


    Ingredients:

    Oil -  1 tsp
    Cumin seeds - ½ tsp
    Ginger - 1 tsp minced
    Garlic - 2 cloves minced
    Carrots - 1 small chopped finely
    Water - 4 cups
    Chicken stock cube - 1 piece
    Soya sauce - 1 tsp
    Tomato Ketchup- 1 tsp (optional)

    Salt to taste
    Pepper to taste
    Cornstarch - 1 tsp mixed with water
    Lemon juice as needed

    For Meatball:
    Chicken mince - 1 cup
    Onion - 3 tblspn finely chopped
    Chilli powder - 1 tsp
    Breadcrumbs - 3 tblspn
    Salt to taste 

    Method:

    Take all the meatball mixture ingredients and mix well. Form into small balls. 

    Heat oil in a kadai. Add in meatballs in that and sear on all sides. This will take around 8 to 10 mins. Remove this to a clean bowl.

    Now add cumin seeds, ginger, garlic, carrots in the same kadai and saute for a min.

    Add in water, chicken stick cube and mix it well. Bring it to a boil and simmer for 5 mins.

    Add in salt, pepper, soya sauce and mix well.

    Now add in the meat ball and simmer for 10 mins.

    Now add in cornstarch mixture and mix well. So it will get a little thick.

    Squeeze in some lemon juice and switch off the flame.

    Serve immediately.

    Add a little cornstarch if you want the soup thick

      I made it! I used home made chicken stock instead of the cube and... wow, it was good. The soup is extremely flavourful, from using the stock and simmering the meatballs in it. It's a really souped-up chicken soup 😀 very filling. I wonder what kind of vegetables I could put in it. I only had carrots and some celery, but what would you use if you could have any veggies you wanted?

      @morriYou can use any veggies that you like, brocoli, zuchinni, cauliflower..

      im from nagercoil too. How do u mince the chicken.coz when i tried in mixie n it turned out bad.Pls tell me how to mince the meat. U r doin a real gud job by the way.
