    Chicken Meatball Soup

    Last Night we thought of making some soup for dinner, since hubby had a little cough. So i thought to making a warm chicken soup for him. I ran out of chicken pieces, but had only some burger mix which made few days back and freeze it. So decided to make meatball soup with it and infuse lots of ginger and garlic in it. So i made a little medicinal kind of soup, and added lots of pepper in it. It was so filling and satisfying.

    I took the mince mixture and shaped into mini meatballs. I seared them in a tsp of oil and cooked them completely. Then i dropped them in the soup. I didn't have any veggies on hand, so i added only some carrots. If you want you can add lots of veggies in this too or make it very clear soup neglecting them. 

    About this Recipe

    A meatball is a ball of ground meat rolled with other ingredients such as bread crumbs, minced onion, eggs, butter, and seasoning. Meatballs are cooked in sauce by frying, baking, steaming, or braising. Meatballs can be made with a variety of different meats and spices. The term is sometimes used to refer to meatless versions made from vegetables or fish, which are also known as fishballs.

    What are chicken meatballs made of?

    In a large mixing bowl, combine ground chicken, eggs, breadcrumbs, Parmesan cheese, olive oil, and seasonings. Mix everything thoroughly, then roll the mixture into 1 inch balls. Place the uncooked meatballs on a sheet pan lined with foil and bake for 20 minutes.

    Who invented the meatball?

    Unfortunately, no one knows who invented meatballs. Although the origins of meatballs are unknown, they are thought to have originated from kofta, a Persian dish consisting of a mixture of meats and either rice, bulgur, or mashed lentils.

    Ingredients for Chicken Meatball Soup

    Chicken Mince:
    Chicken mince, also known as minced chicken, is a type of ground chicken. Its a finely chopped chicken cut thats a leaner alternative to beef mince. Skinless boneless chicken thighs or breasts, or a combination of the two, are commonly used in its preparation.

    Onion:
    Onions are considered a basic ingredient or the foundation of Indian cooking and are used to make any gravy, curry, or bhuna dish. The flavour and aroma of onion transforms any ordinary dish into a mouthwatering and delectable one.

    Breadcrumbs :
    Dry breadcrumbs are commonly used as a topping for gratins, casseroles, and other similar dishes to add a crunchy textural dimension. Fresh breadcrumbs are an excellent binding agent, which is why they are frequently used in meatloaf and stuffing recipes.

    Ingredients
      

    • 1 tsp Oil
    • ½ tsp Cumin seeds
    • 1 tsp Ginger minced
    • 2 cloves Garlic minced
    • 1 Carrots chopped finely
    • 4 cups Water
    • 1 piece Chicken stock cube
    • 1 tsp Soya sauce
    • 1 tsp Tomato Ketchup optional
    • Salt to taste
    • Pepper to taste
    • 1 tsp Cornstarch mixed with water
    • Lemon juice as needed
    • For Meatball:
    • 1 cup Chicken mince
    • 3 tbsp Onion finely chopped
    • 1 tsp Chilli powder
    • 3 tbsp Breadcrumbs
    • Salt to taste

    Instructions
     

    • Take all the meatball mixture ingredients and mix well. Form into small balls.
    • Heat oil in a kadai. Add in meatballs in that and sear on all sides. This will take around 8 to 10 mins. Remove this to a clean bowl.
    • Now add cumin seeds, ginger, garlic, carrots in the same kadai and saute for a min.
    • Add in water, chicken stick cube and mix it well. Bring it to a boil and simmer for 5 mins.
    • Add in salt, pepper, soya sauce and mix well.
    • Now add in the meat ball and simmer for 10 mins.
    • Now add in cornstarch mixture and mix well. So it will get a little thick.
    • Squeeze in some lemon juice and switch off the flame.
    • Serve immediately.

      I made it! I used home made chicken stock instead of the cube and... wow, it was good. The soup is extremely flavourful, from using the stock and simmering the meatballs in it. It's a really souped-up chicken soup 😀 very filling. I wonder what kind of vegetables I could put in it. I only had carrots and some celery, but what would you use if you could have any veggies you wanted?

      im from nagercoil too. How do u mince the chicken.coz when i tried in mixie n it turned out bad.Pls tell me how to mince the meat. U r doin a real gud job by the way.
