Citrus Mango Muffins Recipe / Mango Muffins Recipe

Mangoes are in season right now, i am keeping on looking for new recipes using that precious fruits. This is one recipe which i came across and immediately i gave it a try and it was phenomenal. The muffins had a lovely juicy taste from mangoes and it turned out very delicious.

The muffins are not too sweet, it was moderately sweet and taste so fresh. You can increase the sugar level if you need muffins on the sweeter side..But i liked it this way, because i served it with tea..So try this out and let me know if you liked it..

Preparation Time : 10 mins
Baking Time : 35 to 40 mins
Makes : 6 Muffins

Ingredients:
All Purpose Flour / Maida – 1 cup / 120 grams
Granulated Sugar – 1/3 cup / 67 grams
Lemon zest – 1 tsp
Baking powder – 1 tsp
Milk – 1/2 cup / 120 ml
Egg – 1/2  a egg 
Oil – 1/4 cup / 60 ml  ( I used refined oil )
Ripe Sweet Mangoes – 1 cup peeled, chopped +extra for topping

For Glaze:
Icing sugar / Confectioners Sugar – 1/2 cup
Lemon juice – 1/2 a lemon / about 2 tblspn

Method:
Preheat oven to 180 degree C. Line a Muffin tray with cupcakes cases.
Take a bowl, add in flour, sugar, baking powder and mix well. Set aside.
Now in a jug or another bowl, add milk, oil, egg, lemon zest and mix well.
Now pour this wet ingredients in dry and mix well. Add in chopped mangoes and fold gently, dont over mix.
Now scoop this batter on to the muffin moulds, top each muffin with some more diced mangoes .
Now put this in oven and bake for 35 to 40 mins, insert a tooth pick to see whether the cake is cooked, the tooth pick should come out clean.
Remove from oven and let it cool a bit.
Make the glaze by mixing icing sugar with lemon juice till it is smooth poiring consistency.
Spoon this glaze over the warm muffins and serve.

Take all your ingredients

Take flour in a bowl

Add in baking powder

sugar

mix well and set aside

Take milk in a jug

Add in oil

Add in egg, i need only 1/2 a egg
so i beat the egg little and poured only half

I reserved this egg mix for another recipe

Add in lemon zest
mix well

Pour the mix in the flour mix

mix well

never overmix muffin batter

add in chopped mangoes

fold gently

Now take your muffin moulds

I decided to make fancy little liners

I used a little katori to press the parchment
paper into the moulds

just like this

yay…

I trimmed off the sides a little

all lined

Now take your batter

Use a icecream scoop, it is lot more easier

scoop some batter

pour it in

top with some mango pieces and bake it

Muffins baked

Now frost it with a simple glaze

take icing sugar

add in lemon juice

mix well

Now take your muffins

pour the glaze over the muffins

Do this while the muffins are still warm

so the citrus glaze can go inside the muffins

    Hi Aarthi!

    Thank you so much for sharing this recipe and the step by step directions.

    I have only recently learned to appreciate the gorgeous taste of Mango. I don't know why I never tried them before but I sure am glad I have now!

    @Shafee Nazrinu cannot make, because they are super fine a normal blender cannot make things that fine. But if you want to try, powder 1 cup sugar with 1 tblspn cornflour. Then sieve that. it is icing sugar
