    I told you that i have been slowly getting into baking mood. Specially when i am in my amma's place and my sisters are at home, i totally enjoy baking at that moment. I baked this beautiful muffins, oats brownies, white bread and the yummiest chai masala cake which i baked yesterday. It was so amazingly good. I have plans to make a marble cake as soon as the chai masala cake gets over. I am craving for homemade cakes often nowadays. It is a perfect excuse for me to bake a lot.

    Making some baked goodies from cornflakes was always in my mind for so many days. Somehow i managed to bake one few days back. This recipe is completely mine, i added what all i feel like adding in to the batter and the result was pretty good. 

    They were little dense, but that didn't affect the flavour at all. I enjoyed warm muffin with a cup of milk and it was perfect. My sister told that it was perfect for breakfast, since it is not so rich and sweet. The muffins which i made were little big ones, so i got 6 out of them. But if you use small trays then you will probably get more, make sure you reduce the baking time too.

    I added half a banana in this recipe, to make the muffins soft. And it definitely worked. They made the muffins moist and gave a lovely aroma to them. The corn flakes which we added gave a lovely crunchy top to the muffins. There is no butter in this recipe, which is probably the plus point and also i think adding oil rather than butter in a cake or muffin makes it much better and you can enjoy one of two without any guilty.

    Preparation Time : 10 mins
    Baking Time : 35 to 40 mins
    Makes : 6 big muffins

    Ingredients:

    Cornflakes - 1 ½
    cup / 150 grams

    Dry Ingredients:

    All Purpose Flour / Maida - 1 cup / 120 grams
    Sugar - ¾ cup / 150 grams (add 1 cup if you want sweet muffins)
    Baking soda- 1 tsp
    Baking powder - 1
    tsp
    Wet Ingredients:
    Ripe Banana - ½ or roughly a little more than ¼ cup
    Milk - ¾ cup / 180 ml / 6 fluid ounces
    Egg - 1
    Vanilla - 1 tsp
    Oil - ¼ cup / 60 ml / 2 fluid ounces
    Method:
    Preheat the oven to 170 Degree C / 350 Degree F. 
    Grease a silicon muffin tray with some oil. If using normal tray, line it with some cupcake cases.
    Take all dry ingredients in a bowl and mix well. Set this aside for a while.
    Take wet ingredients in another bowl and mix well.
    Add the dry ingredients into the wet ingredients and give a good mix.
    Add in cornflakes and toss well with the batter.
    Scoop this into muffin cases and fill till ¾ way up.
    Bake it in preheated oven for 35 to 40 min or till a tooth pick inserted comes out clean.
    Remove and allow it to cool down.
    Enjoy with a cup of milk or tea.

      I saw your page today and cornflakes muffins really look yummy, can we cook this with the normal microwave over or do we need an electric oven, kindly reply.

      Hi,

      I just want to know if electric oven is an all purpose oven or used only for baking.. pls suggest which is best as i am planning to buy one.

      @Anonymous I own a OTG oven, it is a morphy richards oven. I baked in that, grill chicken, veggies and stuff like that in that. I only thing which you cannot do is reheat food.
