Confetti Birthday Cake Recipe

I have shared quite a few birthday cake recipes, this is another addition to the cake list. It is a basic white cake recipe which has sprinkles in them.

Confetti cake is nothing but vanilla sponge cake with sprinkles in them..It has only egg whites so the cake turns out to be white and the taste is much more lighter and subtle.

Preparation Time : 10 mins
Baking Time : 30 to 35 mins
Decorating Time : 30 mins
Serves: 10

Ingredients:

All Purpose Flour / Maida – 2 1/2 cup / 300 grams
Baking Powder – 2 1/2 tsp
Salt – 1/2 tsp
Unsalted Butter – 3/4 cup / 170 grams
Sugar – 1 1/4 cup / 250 grams
Vanilla Essence – 1 tblspn
Yogurt or Sour Cream – 1/4 cup / 60 ml
Egg Whites – 4 
Milk – 1 cup / 240 ml
Sprinkles or Confetti – 1/4 cup
Vanilla Buttercream – 1 batch  (Recipe here)
Sprinkles more for decorating

Method:

Preheat oven to 180 degree C. Grease two 9 inch round pan with oil and dust it with flour. Coat on all sides and set aside.

Now take flour, baking powder, salt in a bowl and mix well. set aside.

Now take egg white in a bowl and use a electric beater and whip till peaks form.

Take butter, sugar and vanilla in a bowl and use a beater to whip it till creamy.

Now add in sourcream and whip till creamy. Now add in half of the flour mix and half of the milk and fold gently. Now add the remaining flour and milk and fold gently.

Add in sprinkles and mix gently.

Finally fold in egg whites in portions and gently mix well.

Spoon this into two pans and bake for 30 to 35 mins. Insert a toothpick to check whether it is coming out clean or not. If it comes clean then it is cooked.

Now remove the cake from oven and cool completely. 

Prepare a batch of vanilla buttercream.

Place a cake on the cake stand, Now take some of the buttercream and spread evenly. now place another cake on top and top with some buttercream. Now spread frosting all over the cake and spread evenly.

Top with sprinkles.

Slice and serve.

whip till stiff and set aside
take flour in a bowl
add in baking powder and salt
mix well..set aside
take butter in a bowl
add in sugar
add in vanilla
whip till creamy
add in sour cream or yogurt
whip till creamy
now add in half of the flour mix in
add in milk
mix well
add in remaining flour
fold gently
add sprinkles
fold gently
add in some of the egg white
mix well
add remaining egg white
fold gently
now it is done
divide the batter between the cake pans
bake till done
unmould it and cool it down

Take a cake on a plate
spoon some frosting
spread evenly
place another cake
spoon some filling over
spread some frosting
decorate it as you wish
top with sprinkles
slice and serve

    Where v shall get these type of sprinkles ?? I have searched for it in many shops but still I haven't got them !
