    Eggless Banana Oats & Dates Breakfast Muffins

    I had few really over ripe bananas on hand, whenever i get those bananas on hand, i pop them in freezer. So i can use them in cupcakes, muffins and cakes. This is one of the muffin which i did few weeks back. I added some oats and dates in them to make it super healthy..

    Ingredients for Eggless Banana Oats & Dates Breakfast Muffins

    • All Purpose Flour / Maida - 1 cup / 120 grams
    • Instant Oats - ½ cup / 45 grams
    • Mashed Banana - 1.5 cup
    • Vanilla Essence - 1 tsp
    • Sugar - ½ cup / 100 grams
    • Baking Soda / Cooking Soda - 1 tsp
    • Baking Powder - ½ tsp
    • Milk - ¼ cup / 60 ml
    • Dates - ⅓ cup chopped
    • Oil - ¼ cup / 60 ml
    • (My 1 cup measures 240 ml)

    How to make Eggless Banana Oats & Dates Breakfast Muffins

    1. Preheat oven to 180 degree C. Line a muffin tray with cupcake case. Set aside.
    2. Take mashed banana, sugar, oil, vanilla in a bowl and mix well.
    3. Add in flour, oats, baking soda, baking powder and mix well.
    4. Add in milk and dates and fold gently.
    5. Now scoop the batter into muffin cases and bake for 25 to 30 mins.
    6. Remove and let it cool.
    7. Serve warm.

    Take mashed banana..I used my overly ripe bananas..I know the picture looks gross, but those black bananas are the best to make muffins

      @Anonymousyes u can use. but the muffins will be a little denser. you can use half atta and half maida

      By pre heat u nean for how much time we shud pre heat oven? Also if i m making a smaller batch and half the ingredients shud i also halve baking powder and soda?

      1)if you are halving the ingredient, then halve everything including baking soda and powder.

      2)Preheat oven for 10 mins

      Thanks aarthi.Also about time.even that shyd b reduced? I made these yday with half ingredients but they seem a bit burnt un 25 mins

      Hai Aarthi ,

      tried this muffin 2 times ..i took half of the ingredients and used
      brown sugar ( dark muscovado) and butter instead of sugar and oil...It came out really well...
      My 1.5 yr baby girl and hubby liked it very much...
      Thanks for an easy and wonderful recipe...

      I'm glad I chanced upon ur blog...big fan of your cakes..u make it look extremely easy and simple. Can I make the above recipe in microwave oven convection mode..if yes what temp & time and can I make it as a cake instead of muffin
