Christmas is in a couple of weeks and i am getting lots and lots of mails from viewers to post a different fruit cake recipe and different cakes and cookies recipes. Due to my busy schedule, looking after my 4 month old lil one maha. I am finding it difficult to bake, but i will surely post them, if i find some time. So please bare with me. But i have quite a few cookie recipes and few cake recipes sitting in my draft folder, i will share them with you all in the mean time. 

My Microwave chocolate cake recipe was a huge success which gave me confident to try more microwave recipe. And i made a microwave fruit cake recipe and it was a huge success. I can’t wait to share that with you all. I think i will post them next week. Mean time you can check out my Ultimate Plum cake recipe.

Now coming back to this recipe, this has become my new favorite cookies of all time. It was soft, chewy and sweet. So yummy. I totally loved the look of it and there is no doubt that your kid will go crazy about this jam cookies. Please make sure you check out my notes section before you bake this.  
 

Preparation Time : 15 mins
Resting Time : 1 hour
Baking Time : 12 to 15 mins
Makes : 12 to 15 cookies

Ingredients:
All Purpose Flour / Maida  – 1 1/4 cup / 150 grams
Sugar – 1/2 cup / 100 grams powdered
Butter – 100 grams ( I used ghee)
Salt – 1/4 tsp
Vanilla Essence – 1 tsp
Curd / Yogurt – 2 tblspn
Jam as needed
Sugar – 3 tblspn for rolling

Method:

Take butter, sugar and vanilla essence in a bowl. Cream it together.

Now add in buttermilk and salt. Mix well.

Add in flour and mix well to form a dough.

Once mixed put it in fridge for 45 mins to 1 hour.

Now preheat the oven to 180 degree C/ 360 degree F. Line a baking sheet with foil and brush it with oil or butter.

Now take the dough out of fridge and shape it into a small balls and roll in sugar.

Arrange it in a baking tray and use the back of a curved spoon or your fingers to make indention in the middle.

Put your favorite jam in the middle and bake for 12 to 15 mins.

Remove it to a cooling rack and let them cool completely.

Store it in a air tight container.



Notes:

1)I used ghee as the fat, but the orginal recipe calls for butter. You could use any of the both.

2)Putting the dough in the fridge is important. I baked the first batch of cookies without putting them in fridge, while baking they spreaded out so much, still tasted great. You can see the first two pictures.
I baked the second batch by putting them in fridge, They came out round and perfect. you can refer the third picture. So it is upto you, i strongly suggest you to put the dough in fridge.

3) Rolling the dough in sugar is optional, but it gives you a wow effect.

4)You can use any of your favorite jam. I used mixed fruit jam and homemade apple jam(recipe soon)

5)The cookies will stay soft when you take out of oven, they will harden as they cools. Each oven varies, so keep an eye on the cookies.



Pictorial:

Take all your ingredients
Add sugar to butter
Add a dash of vanilla
Mix them together
Add curd
Mix them up
Add a pinch of salt
And flour
Knead to form a dough
Put in fridge for a hour
Now roll them into balls
Take a ball
Roll in granulated sugar
when it is rolled
Arrange them in a baking tray
How cute they are
Now use a spoon like this
Press over the dough ball
All done
Spoon some jam
Bake them

Serve

    Ponga aarthi..my mobile is full of bookmarks…al frm ur site..also i devloped such a lazy habit to scrool down n see for pics in ither food sites n get irritated n say ti me "i cant understand a single word without photos" n quitting that page…now u made me addicted to ur page..u shd onky cook n put al recioes her after <3 <3 <3

    If I bake this in cooking range then I have to keep the tray in centre ?? And shall I light the flame on top and bottom also when baking ??

    @RegiYes u can have to keep it in center rack and both the heating element should be on

    hii aarthi…I am new entry to ur blog…ur recipe s r awesome…I tried few muffins, they came out sooooper… I hv Samsung convection oven, with microwave n grill options. they provided with grill double stand n one tray…pl guide me how to bake this cookies in my oven….thanks in advance

    Hi Arthi. I tried the cookies yesterday. Taste was really yummy. But it was not hard and crispy it was like a Bengali sweet. 😔 I baked it for about 13-15 mins. Even then. The cookies were very soft. What had went wrong.
