Garlic Chicken Roast / Oven Baked Garlic Chicken / Garlic Roasted Chicken

Warning: Don’t love garlic, please turn back. This recipe is not you. It is filled with garlicky flavour and tons and tons of garlic. You don’t want to go for a date or go to a face to face conversation with someone you love or someone you hate. But the one advantage i can give you is, your house will smell so amazing when you bake this. Full of GARLICKY aroma..

How could such a yummy recipe can be this simple. Yes it is too
simple, just a simple marination required. That too calls for just
blending few stuffs together. The longer you marinate the chicken the better the flavour. I usually do marination the night before and leave it to infuse overnight, then cook it the next day.

This is a garlic roast chicken recipe, but i have a gravy version of garlic chicken which i love a lot. That is a kind of indo chinese recipe. I will surely post that soon.



Preparation Time : 10  mins
Resting Time : 6 hours or overnight
Cooking Time : 1 hour
Serves  – 4 to 5


Ingredients:
Chicken – 1 whole cut into 10 pieces


For Marination:
Coriander Leaves / Cilantro – 5 tblspn
Garlic – 20 cloves
Peppercorns – 1 tblspn
Chilli powder – 1 tsp
Turmeric powder / Manjal podi – 1 tsp
Salt to taste
Oregano – 1 tsp
Lemon Juice – 3 tblspn
Oil – 1/2 cup


Method:

Make deep slits over the cleaned chicken. Take them in a container.

Blend all the ingredients given in the marination list to a smooth paste.Add little water if needed.

Pour this over the chicken and mix them well.

Leave this to marinate for 6 hours or overnight in the fridge.

Take them out of the fridge before few hours, so it comes back to room temp.

Preheat the oven to 220 Degree C / 440 Degree F.

Take a foil lined tray and spray it with some oil. Arrange the chicken in this and bake it for 15 mins. Now pour off the excess liquid.

Now turn the oven to 180 Degree C / 360 Degree F and bake it for 40 mins.

Now flip the chicken on other side, turn the oven to 250 Degree C / 500 Degree F,  Bake it for 5 more mins so it gets nice colour.

Remove it from oven and serve with any bread or rice.


Pictorial:

Take all your ingredients
Make deep slits in your chicken
Now make the marinade
Add garlic to a bunch of coriander leaves
Add in pepper
Chilli, turmeric and salt goes  in
pour in some lemon juice
Now take some oregano
And sprinkle them in
Drizzle in some oil
Time to blend it
Let it be a smooth puree
Now take chicken in a container
Pour marinate over this
Mix them around
Cover it and let them marinate
Now take a tray and line it with foil
Take the marinated chicken
Arrange them on the tray
Bake them
Serve
Enjoy this flavourful chicken

    @Anonymousno it wont work, since there is no binding agent. But if you want to, you can add some rice flour to this, mix well and fry

    You must have kept near the coil. no issue, the chicke wont burn, only the marinate on the sides will darken.

    Hi Arti. I have made this chicken 3 times already. Its now my favourite marinade for baked chicken . The chicken is so moist and yummy.
    I keep the chicken to bake on a rack over a pan so i dont have to pour out the extra liquid.
