I love making sandwiches for breakfast, lunch, dinner, or as a late light snack. It is my go to food of all time. Each time i play around them and come up with some bright recipes. Check out all the sandwich recipes here. This is one recipe which i made couple weeks back. They came out pretty good.

The spread which i made for this is a low fat version, instead of mayonaisse i made this using curd and ketchup. You could even add some spices into the dressing too.The potatoes and onions and grilled to perfection, and the tomatoes give a nice freshness to this sandwich. I hope you will try this out and let me know how it turned out.

Preparation Time : 15 mins
Cooking Time : 15 mins
Serves – 2 to 3

Ingredients:

Bread Slices – 8
Potatoes – 1 large peeled and sliced into rounds
Onions – 1 large peeled and sliced into rounds
Tomatoes – 1 large sliced into rounds
Oil for toasting bread

For Spread:
Thick yogurt / Curd – 1/2 cup
Tomato Ketchup – 1 tblspn or to taste

For Marinate:
Oil – 3 tblspn
Chilli Powder – 1 tsp
Pepper Powder – 1 tsp
Cumin Powder / Jeera podi – 1 tsp
Garlic – 2 cloves grated
Salt to taste

Method:

Take the potatoes in a sauce pan and cover it with water. Add some salt in it. Cook the potatoes till it is cooked completely. Drain it and set aside.

Take curd and ketchup in a bowl and mix them well. Your low fat spread is done.

Now take all the marinate ingredients in a bowl and mix them well.

Place the potatoes and onions in the marinate and let them soak the marinate.

Heat a grill pan or tawa and cook the veggies on both sides till they turn golden. Remove to a plate.

Now for the sandwich. Take couple of bread slices and drizzle the spread over it evenly on both sides.

Now place the potatoes, onions on the bread and place some tomato slices too.

Cover with another slice of bread.

Toast this on the hot tawa till they are golden.

Cut into traingles and serve.
