Instant dosa mix is a must have ingredient in your pantry, you never know when you will run out of dosa batter. At those time this comes as a saviour. Not only it taste good but you can make dosa in a jiffy. Even though it taste good, but it doesn’t taste as good as freshly made batter dosa. But for a urgent it is a life saver.
The dosa made using this batter is crispy and gives nice colour as well. Taste great with chutney or sambar. You can make masala dosa as well using the batter
Preparation Time : 10 mins
Cooking Time : 1 to 2 min per dosa
Makes : 5 to 6 dosa from 1 cup of instant powder

Rice Flour – 2 1/2 cup (roasted)
Urad Dal Flour – 1/2 cup
Gram Flour / Kadalai Mavu / Besan – 4 tblspn
Poha / Aval – 1/2 cup
Sooji / Rava – 1/2 cup
Fenugreek Seed Powder – 2 tsp
Powdered Sugar – 1 tblspn
Eno Fruit Salt / Baking Soda – 1 tsp (optional – check notes)
Method:
Dry roast, poha, sooji and urad dal flour for few mins. Take it in a blender and powder finely.
Roast rice flour and besan lightly and set aside.
Now take all the ingredients in a bowl and mix well.
Store in a air tight container.
When making dosa, take the flour and add in water to make a batter. Add in salt and mix well.
Heat tawa, spoon the batter in and spread it into a thin dosa. Drizzle oil around the sides and cook till golden, flip over and cook for few more mins. serve.
Notes:
1)If you are making the dosa without fermenting, then you have to add either eno fruit salt or baking soda.
2)If you are fermenting the dosa batter, dont need to add the eno salt or baking soda. I strongly suggest you to ferment the batter before making the dosa for taste.

now take your urad dal flour |
add 1/2 cup of it in |
now roast this for a good 2 mins..if you have raw rice flour roast it lightly along with the besan as well. |
take it in a blender |
blend till it is fine |
Now in a bowl, take rice flour |
add the powdered stuff in |
add in gram flour |
add in fenugreek powder |
add in eno fruit salt |
Add in powdered sugar |
use a whisk to whip this up |
Mix well |
Now it is mixed well |
Store in a air tight container |
measure 1 cup of flour in a bowl |
add in water |
mix well.. |
add salt |
make it a semi thick batter..now let this ferment overnight |
when u are making the dosa,,pour a ladleful of batter in a hot tawa |
spread it thinly |
drizzle the sides with oil |
flip over when the top is cooked |
