Japan chicken is roaming all over the internet. It is a popular dish in one of the erode restaurant called Amman mess. Once the dish got its fame, Many restaurant all over tamilnadu started adding this in their menu too.
This dish has nothing to do with Japan. It is a fried chicken dish cooked in a white creamy cashew milk sauce with lots of garlic and green chillies.

The process of making Japan chicken is super simple, you start by coating chicken with salt, pepper, flour, cornstarch. Deep fry chicken till golden brown.
The sauce made with butter, garlic, green chillies, milk, ground nuts and cook until thickens. The sauce has slight sweet taste from the sugar. Spice from the sauce is just white pepper powder, green chillies.
Add fried chicken and cook until the sauce thickens. Because of the ground nuts the sauce will thicken into a creamy consistency without addition of cream.

Ingredients
- Chicken - cut chicken into small pieces. Even though boneless chicken is prepared. You can use chicken with bones too.
- Flour - I used a combination of plain flour and cornstarch.
- Garlic & Chillies - main flavouring for the sauce. Use lots of it.
- Milk - milk is used to make the sauce, which creates creamy texture.
- Butter - butter is used to make the sauce while oil is used to fry the chicken.
- Seasonings - salt, white pepper powder and sugar are the seasoning used in chicken.
- Nuts - one of the main ingredients for this chicken is ground nuts. You can use cashews or almonds which is ground into powder.

Step by Step Pictures
Marinating Chicken
1)Take chicken in a bowl. It is best to use boneless chicken for this recipe. Make sure your chicken is cut into small pieces.

2)Season the chicken generously with salt and white pepper powder.

3)Add in plain flour and cornstarch to the chicken. Add little water and mix well to coat the chicken.

4)Now the chicken is coated well with the flour.

Frying Chicken
5)Heat oil for deep frying. Drop chicken in and fry till golden brown and cooked completely.

6)Strain the fried chicken using a slotted spoon. Set aside.

Make Japan Chicken Sauce
7)Heat butter in a pan. Add in lots of finely chopped garlic. Saute the garlic until fragrant.

8)Add in green chillies, saute for a minute.

9)Pour in milk, mix well.

10)Add in badam powder or cashew powder.

11)Season with salt, white pepper powder and sugar. Mix well into the sauce.

Making Japan Chicken
12)Add the fried chicken into the sauce. Mix well.

13)Let the chicken cook in the sauce for 3 to 5 minutes until the sauce thickens.

14)Creamy Japan chicken is ready to enjoy.

15)Serve Japan chicken hot immediately.

Expert Tips
- I used bone-in chicken. But boneless chicken is preferred.
- Instead of cashew powder. You can add badam powder as well.
- I blend my cashews in a blender jar for few seconds till it is powdered.
- Green chillies sauted in butter adds so much flavour. So add as much as you want.
- This dish gets it taste from garlic. So feel free to add as much garlic as you want.
Serving & Storage Suggestions
- Japan chicken taste great with plain white rice, but you can serve with fried rice, noodles or as an appetiser.

Ingredients
For Japan Chicken Sauce
- 1 tablespoon Butter
- 10 cloves Garlic peeled & chopped finely
- 5 no Green chillies slit
- 2 cups Milk
- ¼ cup Cashew (Powdered)
- 1 teaspoon White pepper powder
- 1 tsp Sugar
- Salt to taste
For Chicken
- 500 grams Chicken preferably boneless
- 1 teaspoon White Pepper powder
- 2 tablespoon All Purpose flour (Plain Flour)
- 4 tablespoon Cornstarch
- Salt to taste
- Oil for deep frying
Instructions
- Take chicken in a bowl. Add in salt, white pepper powder and mix well. Add cornflour, maida and little water and mix really well to form a thick mass. Heat oil for deep frying. Drop chicken in hot oil and fry till golden brown around 5 to 6 mins. Drain on a paper towel and set aside.
- Now make the sauce. Heat butter in a pan. Add in garlic and saute for few seconds. Add in green chillies and mix well. Pour in milk, cashew powder, salt sugar and white pepper. Mix well.
- Add in the fried chicken and coat well in the sauce. Let the chicken cook in the sauce for 3 to 4 mins. The sauce will thicken and coat the chicken.
- Serve hot.
