    Delicious jelly cakes which are coated in jelly liquid and then coated in desiccated coconut which makes it a delicious treat.

    This is one of  recipe which i wanted to bake for a very long time. This is kylie kwong's recipe, yesterday i saw her cooking show and she made this, I remembered this and luckily i had all the ingredients on hand so i don't have to run to near by shop.

    What is Jelly Cakes?

    Jelly cake was initially recorded as jelly in Hannah Glasses 18th- century book The Art of Cookery, where it appeared in a layer of trifle. In the nineteenth century, English cuisine writers Eliza Acton and Isabella Beeton included jelly in their best-selling cookbooks.
     
    Jelly is created by extracting fruit juice and thickening it with sugar and pectin (natural or synthetic) to form a solid but spreadable consistency. It's most commonly used with entire fruits with seeds or skins, such as grapes, cranberries, and raspberries.

    I am telling you, this is one of the must try recipe. You have to try it out for sure. It is so good and so easy. Specially when you have kids around they will love this for sure.

    Ingredients For jelly cakes

    Jelly Powder : Reduce the liquid content, concentrate the flavor, and thicken the mixture.

    Desiccated Coconut : Desiccated coconut can be used as coating in both savoury and sweet recipes to give them a coconut flavour and texture.

    Unsalted Butter : You have complete control over the overall flavour of your recipe when you use unsalted butter. This is especially crucial in baked dishes that rely heavily on the pure, sweet cream flavour of butter (butter cookies or pound cakes) Unsalted butter allows the true, natural flavour of your goods to
    shine through when cooking.

    Vanilla Essence : It enhances all the other flavors in the recipe.

     
     
    This cake can be made for any parties as well.. Hope you will give this a try and let me know how it turns out for you..

    How to Make Jelly Cakes

    • Start by making the jelly as per package directions and put it in fridge to set, the jelly shouldn't set completely it should be still little liquidy so we can dip the cakes in this.
    • Preheat oven to 180 degree C. Grease a 12 cup nonstick cupcake cases with oil and set aside. This will make around 20 mini cakes.
    • Take flour, baking powder and salt in a bowl and mix well. Set aside.
    • Now take butter, vanilla and sugar in a bowl and whip till creamy. Add in egg and whip again.
    • Now add in ⅓rd of the flour mix and ⅓rd of the milk and fold gently. Keep alternating the flour and mix and fold everything well.
    • Use an ice cream scoop to scoop the batter into each muffin mould, don't fill too much just a tblspn of batter is enough.
    • Bake this for 10 mins. Remove it from oven and cool down a little. remove the cakes from oven and cool down completely.
    • Now take the jelly from fridge and dip the cakes in it, roll it in coconut and set aside in a plate.
    • Now store this in a container in fridge

    Ingredients

    • For Cake:
    • All Purpose Flour / Maida - 1 ¼ cup
    • Baking Powder - 1 ¼ tsp
    • Salt - a pinch
    • Sugar - ½ cup
    • Unsalted Butter - 125 grams
    • Vanilla Essence - 2 tsp
    • Milk - ½ cup
    • Egg - 1
    • For Topping:
    • Jelly Packet - one packet around 85 grams to 90 grams
    • Water - 450 ml as mentioned in packet
    • Desiccated Coconut - 2 cups

    Instructions

    • Start by making the jelly as per package directions and put it in fridge to set, the jelly shouldn't set completely it should be still little liquidy so we can dip the cakes in this.

    Start by making the jelly

     

    boil water as per package directions

     

    take the jelly powder in a bowl

     

    add hot water

     

    mix well

     

    put this in fridge, the jelly shouldn't set hard, it should be still liquidy

     

    take your ingredients for cakes

     

    i used a nonstick muffin pan

     

    grease it well with oil

     

    take flour in a bowl

     

    add in baking powder and salt

     

    mix well..set aside

     

    take butter in a bowl

     

    add in vanilla

     

     sugar

     

    use a beater or hand whisk to whip this up

     

    now it is creamy

     

    add in one egg



    mix well

     

    add ⅓rd of the flour mix in

     

    add ⅓rd of milk

     

    fold gently

     

    add remaining ⅓rd

     

    some more milk

     

    fold again

     

    now the remaining flour

     

    and milk

     

    mix gently

     

    take a tblspn of batter

     

    pop it in the tin

     

    tap few times so it spreads evenly

     

    now it is baked

     

    remove it out of the tin and cool down

     

    now take your jelly

     

    you can see still it is little liquidy

     

    like this

     

    time to assemble

     

    take your cakes

     

    drop in jelly mix

     

    coat well

     

    drop in coconut

     

    roll well

     

    done

     

    you can do multiple at the same time as well

     

     

    done..now chill this for few hours

     

    serve cold

      Hi dear,
      Dharika here hope u remember me...I tried this jelly cake ydy..it turned out yummy...my hubby loved it ...it was so soft and moist...u really rock Aarthi..one doubt can we use even pudding mixes instead of jelly ones?
