This is one of recipe which i wanted to bake for a very long time..This is kylie kwong’s recipe, yesterday i saw her cooking show and she made this, suddenly i remembered this and lukily i had all the ingredients on hand so i dont have to run to near by shop..

I am telling you, this is one of the must try recipe. You have to try it out for sure. It is so good and so easy..Specially when you have kids around they will love this for sure..

Makes : around 20 to 25 mini cakes

Ingredients:
For Cake:
All Purpose Flour / Maida – 1 1/4 cup
Baking Powder – 1 1/4 tsp
Salt – a pinch
Sugar – 1/2 cup
Unsalted Butter – 125 grams
Vanilla Essence – 2 tsp
Milk – 1/2 cup
Egg – 1
For Topping:
Jelly Packet – one packet ( around 85 grams to 90 grams)
Water – 450 ml ( as mentioned in packet)
Desiccated Coconut – 2 cups
Method:
Start by making the jelly as per package directions and put it in fridge to set, the jelly shouldn’t set completely it should be still little liquidy so we can dip the cakes in this.
Preheat oven to 180 degree C. Grease a 12 cup nonstick cupcake cases with oil and set aside. This will make around 20 mini cakes.
Take flour, baking powder and salt in a bowl and mix well. Set aside.
Now take butter, vanilla and sugar in a bowl and whip till creamy. Add in egg and whip again.
Now add in 1/3rd of the flour mix and 1/3rd of the milk and fold gently. Keep alternating the flour and mix and fold everything well.
Now use a icecream scoop to scoop the batter into each muffin mould, dont fill too much just a tblspn of batter is enough.
Now bake this for 10 mins. Remove it from oven and cool down a little. remove the cakes from oven and cool down completely.
Now take the jelly from fridge and dip the cakes in it, roll it in coconut and set aside in a plate.
Now store this in a container in fridge.

add remaining 1/3rd |
some more milk |
fold again |
now the remaining flour |
and milk |
mix gently |
take a tblspn of batter |
pop it in the tin |
tap few times so it spreads evenly |
now it is baked |
remove it out of the tin and cool down |
now take your jelly |
you can see still it is little liquidy |

take your cakes |
drop in jelly mix |
coat well |
drop in coconut |
roll well |
done |
you can do multiple at the same time as well |
done..now chill this for few hours |
serve cold |

Dharika here hope u remember me…I tried this jelly cake ydy..it turned out yummy…my hubby loved it …it was so soft and moist…u really rock Aarthi..one doubt can we use even pudding mixes instead of jelly ones?

yes u can, but you have to add food colour and flavourings in that
