Keralan Varutharacha Rasam

Rasam is one of the easiest dish I can imagine…We used to have rasam daily in our house..Mum used to say that rasam is a must because it helps in digestion..
A Typical lunch in our house will have rice,any strong gravies like sambar or vathakulambu some sidedishes like cabbage,potatoes or beans and the important one rasam and to finish everything a little of curd and pickle….

My mum makes rasam in her own way…But mine is totally different…I always make rasam like this..

Now I have discovered another way of making it…That is a recipe from kerala…This has a nice aroma of coconut oil in it which is traditional in kerala..
So hope you like it…
Ingrediants:
Tomato-2 chopped
Tamarind / Puli-1 tblspn mixed with some water
Green chilli-2
Curry leaves-2 spring
Salt to taste
Sugar-1 tsp
Coconut oil-2 tblspn
Cilantro/Coriander leaves-a handful
For Rasam paste:
Garlic-6 cloves
Dry Red chilli-3
Cumin seeds /Jeerakam-1 tsp
Coriander seeds / Malli-1 tblspn
Pepper-1 tsp
Method:
Grind all the ingrediants given for the rasam paste into a smooth paste by adding some water.
Heat oil in a kadai and add the paste and cook till oil separates..
Throw in the tomato and mix well..Add green chilli and mix well..
Season with salt and sugar and mix well..Pour in tamarind juice and mix well
Pour in enough water and let it come to a boil..
Now add cilantro and curry leaves and switch off the flame..
Serve it with rice..

Take all your ingrediants
Rasam spices
chop up your tomatoes
take all spices in blender
make into a fine paste
Cook that in some oil
till oil separates from this…
Now add in tomatoes
and green chilli…
Season with salt and sugar
mix well
add in tamarind water and lots of water
bring that to boil
add a good amount of cilantro and curry leaves
Mix well
Serve……
I love to serve it the traditional way
Best served with rice
