Savoury Spiced Up Rice Balls
Finally I am up with my post for ganesh chaturthi. I wanted to post his favorite kolukattai recipes in my blog before his big day. But I think I can make up to only one. I will try to make some sweet modak and post it here.
About Steamed Salt Kozhukattai
A rice ball is any food item made from rice that has been shaped, condensed, or otherwise combined into the shape of a ball. Rice balls can be found in many different cultures that consume rice, but they are especially common in Asia.
These are offered as naivedyam or prasadam to Lord Ganesha during the vinayaka chathurthi.
Rice balls are a popular dish in Korea and Japan, where sticky japonica rice is the main source of nutrition. Because it is naturally sticky, this rice variety is easy to lump up.
Ingredients for Savory Spiced Up Rice Balls
- Rice
- Salt to taste
- Water as needed for making puree
- Coconut - 1 cup
For Tempering:
- Oil - 2 tbsp
- Mustard Seeds / kaduku - 1 tsp
- Channa dal / Kadala Paruppu - 1 tbsp
- Urad dal / Ulundu - 1 tbsp
- Dry red Chilli - 5 cut into small pieces
- Curry leaves - 1 spring
Mustard Seeds :
They are used as a seasoning rather than a base flavour in many Indian dishes, and they really perk up a lentil or rice dish when fried in a little oil with curry leaves . As a result, mustard seeds are excellent for adding flavour without adding fat to your diet.
Urad dal :
When cooked, urad has an earthy flavour and an unusual mucousy texture.
Dry Red Chillies :
Red chilies were introduced to India by Portuguese traders from Mexico. India is now the world leader in the cultivation of dry red chilies. Red chilies are more commonly consumed in hotter regions of India, such as Rajasthan, because they help to keep the blood clean and thin.
This is one of our favorite breakfast item. This recipe is so easy to make and you don't need to wait for a whole long day to make your rice ferment unlike dosa batter. Now coming back to the recipe..They are so easy to make just make the batter and cook it a bit..then steam it and dig in. This one taste great with coconut chutney. How to Make Savory Spiced Up Rice Balls
- Wash rice well and let it soak for 2 hours. Drain it and add to a blender.
- Add salt to it and make into a puree by adding some water.
- Now heat oil in a kadai. Add all the ingredients given in the tempering list in the given order and let them sizzle for a min.
- Add the ground rice mixture and mix well. Keep mixing till everything comes together and form into a soft dough.
- Take it off the heat and add coconut in it. Mix well till it forms a smooth dough.
- Divide into equal portions and shape into round balls.
- Place them in a steamer basket and steam them in a idli cooker or if you are like me, I used my electric rice cooker for about 15-20 mins till the
kolukkatai is done. - The kolukkatai must have turned shiny and glossy of they are done. Or cut a ball you will not find any doughyness inside those kolukattai.
- Serve hot with chutney or idli podi.

@MadhaviNo rice flour makes it so rubbery. I have another one version which used rice flour, will post soon. If you want soft kolukattai you have to use rice

hai aarthi, nice receipe. you know something my mom also used to make kozhukattai in the same way. now i am also following the same only thing is i used to grind the coconut along with rice.
