    Fried Brinjal Recipe with step by step pictures. Brinjal fry or Eggplant fry is a simple masala coated side dish. Brinjal fried with spices and taste amazing with rice and rasam.

    Fried Brinjal Recipe

    This is a simple fried brinjal which takes only few minutes to make. I am feeling really tired now to explain about this dish. I know the pictures speaks for itself. Off you go to the step by step recipe with pictures.

    How to Make Brinjal Fry

    • In a mixing bowl add chilli powder, turmeric powder, salt.
    • Add water and make into a smooth paste.
    • Now add the sliced brinjal in this and toss well.
    • Heat oil in a frying pan and add in the brinjals.
    • Fry this till golden and crisp on both sides.
    • Remove it on a plate.
    • Now in the balance of the oil add in the onions and curry leaves.
    • Fry this for 2 mins. Put this onion over the brinjal.
    • Serve with rice and dal.

    Ingredients
      

    • 1 Brinjal / EggPlant sliced into rounds
    • 2 tsp Red chilli powder
    • 1 tsp Turmeric powder / Manjal podi
    • 1 Onion sliced
    • 1 sprig Curry leaves
    • Oil for shallow frying
    • Salt to taste

    Instructions
     

    • In a mixing bowl add chilli powder, turmeric powder, salt.
    • Add water and make into a smooth paste..
    • Now add the sliced brinjal in this and toss well.
    • Heat oil in a frying pan and add in the brinjals..
    • Fry this till golden and crisp on both sides..
    • Remove it on a plate..

    Cut the top and bottom of the eggplant
    Pin
    Slice it in rounds...Slice the onions too..

    Take the spices in a bowl

    add water

    make into a paste

    add eggplant in this

    toss well

    shallow fry in oil

    flip back and fry other side too

    Version 2: Brinjal Fry Recipe

    This is a simple version of brinjal fry recipe with a dry masala coated over brinjal slices and fried till crispy.

    Ingredients for Brinjal Fry

    1. Brinjals  / Eggplant – 6
    2. Rice Flour-4 tblspn
    3. Chilli Powder-2 tsp
    4. Coriander Powder / Malli Podi -1 tblspn
    5. Salt to taste
    6. Oil  for pan frying

    How to Make Brinjal Fry 

    1. Wash brinjals and cut off the top. Now slice this thinly into circles.
    2. In a shallow plate, take rice flour and add in chilli powder, coriander powder and salt and mix well.
    3. Now take each brinjal slices and dip in the rice flour mixture and set aside in a plate. Do exactly same with everything.
    4. Now heat 2 tblspn of oil( for one batch) in a frying pan and drop the brinjals one by one.
    5. Cover with a lid and let it cook for 5 mins on one side. Now remove the lid and cook it for another 3 mins on other side on a low flame.
    6. Remove the brinjals to a plate and continue the process until you end.
    7. Serve hot with rice and any gravy.

      it was good aarti but i guess i made amistake of adding more oil ,so the ingredients were not sticked to brinjal instead it sinked in oil,need advice

      @deepaIf the brinjal is not sticking, slightly wet the brinjal and then try coating with the masala. It will stick.
