    Tangy and Buttery lemon bars which has a crusty buttery flaky shortcrust pastry which is filled with a custardy lemony filling which taste so delicious.

    Lemon Bars Recipe

    Baking a Lemon Bar is my Dream. Along with the Apple Crumble, I longed so much to bake this lemon bars. I was a little bit worried about how it will taste. Till today i had a different idea about a lemon bar..The taste which i imagined is completely different, because i have never tasted it in my life.

    About Lemon Bars

    The base is a simple short crust pastry which turned out too flaky and buttery, which i adore..The topping is like creamy, lemony, sweet with a little kick and zing. It just plays around your tongue..Give it a try and you will know why i simply love it.

    I found some fresh lemons lying in the fridge, and was thinking what to come up with that. Suddenly I realised why not make some lemon bars out of it.  I looked out for the recipe and found that i have everything on had. Frankly you don't need much of the ingredients apart from your basic, flour, sugar, butter and so on..So decided to give it a try.

    Right now i am completely satisfied and happy with the result. I beg you to try it out, because it was so good. If you love a desert which has lemon in it and which is sweet and tart at the same time then please don't wait..I can assure that you can never go wrong with a lemon bar.

    How to Make Lemon Bars

    • Preheat the oven to 170 Degree C/ 350 Degree F. Butter a square pan 
    • Take Butter and icing sugar in a mixing bowl and beat them till creamy. 
    • Add in salt and flour and mix well till it gets together.
    • Transfer this to a greased pan and press it with your hands so that it is packed firmly.
    • Bake it in the oven for 20 mins till light golden. 
    • When the crust is in the oven make the filling. Take eggs, sugar, lemon zest, lemon juice, flour in a bowl and mix well.
    • When the crust is baked, remove it from the oven. Pour the filling over the crust and return it to the oven for 20 more mins.
    • Remove from the oven and let it cool down for 30 mins before slicing.
    • Dust with more confectioner's sugar and enjoy.

    Ingredients

    • For Bottom Crust:
    • Butter - ½ cup / 113 grams
    • Confectioner's Sugar / Icing Sugar - ¼ cup / 30 grams
    • All Purpose Flour / Maida - 1 cup / 120 grams
    • Salt - ¼ tsp
    • For the Lemony Filling:
    • Eggs - 2
    • Regular Sugar - 1 cup / 200 grams
    • Lemon Zest - 1 tblspn
    • Lemon Juice - ¼ cup
    • All Purpose Flour / Maida - 2 tblspn

    Instructions

    Lemon Bars with step by step pictures

    You will need, Icing sugar, Flour, Regular sugar,
    Butter, Lemons, Salt and Eggs

     

    Start by making the crust..
    Take butter and icing sugar in a bowl

     

    cream it a little

     

    add salt to it

     

    along with some flour

     

    start mixing

     

    till it resembles in to crumbs

     

    Oil a square pan

     

    Transfer the mixture into the pan

     

    press it firmly and throw them in the oven..

     

    While it is in the oven,
    make the filling...Take sugar in a bowl

     

    add couple of eggs in it

     

    and beat well

     

    add the lemon zest

     

    pour some lemon juice in

     

    strain the juice, so that any pulp
    gets catched in the strainer

     

    add couple tblspn of flour

     

    and mix well..

     

    Now dip your fingers in and
    taste for tartness and sweetness

     

    Gleaming Citrus Mixture

     

    Remove the crust from the oven, it will be light golden

     

    Pour the citrus filling over the crust

     

    and put it back in the oven

     

    till it is all set

     

    Cut into pieces and dust it with icing sugar before serving

     

    Get yourself a plate and a fork and
    of course a piece of lemon bar

      These lemon bars look absolutely delicious Aarthi.Can we substitute the lemon with orange or strawberry ?will we get the same result? And do we need baking powder if we want this bar to be moist, Aarthi ?

      @laavys kitchenYes u can use orange and make it as orange bars. I think you can use strawberries too. NO baking powder is not needed.

      @Harisorry u cannot make it without eggs, because eggs make the custard to set.

      Can I use cake flour or self raising flour instead of maida?

      @AnonymousYou can use cake flour and please dont use self raising flour because it has some raising agent in them

      Hi Aarthi , you have a wonderful site here . All your recipes are very attractive . I have a suggestion though - i was looking into your lemon bar recipe and found it little confusing when i saw the quantity for each ingredient . If you see , you said 1/2 cup butter or 113 g and then 1/4 cup or 30 g of sugar
      - if ur using the same cup for measuring then half of 113 g will be more than 50 g right ? but its mentioned as 30 g - so if u can give some idea regrading the cup measurement accurately then it will be helpful since many of us wont have a measuring stand to measure by weight and use .I understand u have used the recipe from joyofbaking but u can mention how u have measured the ingredients using the cup u used . Sorry for the trouble . Once again ur recipes are awesome - keep up the good work

      @AnonymousYes u can measure in same cup. But each ingredient weigh diff in same cup. hence the amount looks dif in gram. You can use same cup to measure.

      I love ur all recipes. Today i tried lemon slice it turned put nice. But i have one confusion, it is lottle soft like paste from inside.Is it normal or something gone wrong? I have never tried or eaten lemon slice before so juat want to know?Once again thanks a lot for your recipes.Keep more recipes coming.
