Bread omelet is so facinating recipe. I love it so much, that i can eat it even everyday. It is one of my favorite too. Normally i leave out the chutney which is spread inside and have only the sandwich. But i came across this recipe from my hubby who had tasted inkodaikanal. He insisted me to try it, so i made it immediately and to my surprise it was totally yummy.

The chutney along with the cheese tasted so yummy. This is so filling too..I now make the chutney in bulk and freeze them. So i can make it whenever i want..With no more delay off you go to the recipe..

Preparation Time : 10 mins
Cooking Time : 5 mins
Serves : 1


Ingredients:

Bread – 4 slices
Egg – 2
Salt to taste
Pepper to taste
Cheese Slice – 1 cut in half
Oil – 2 tsp
Tomato Ketchup for serving

For Chutney:
Coriander leaves – 1/2 cup
Mint Leaves – 1/2 cup
Ginger – 1 tsp or a small piece peeled
Salt to taste
Sugar – 1 tsp
Green Chilli – 2
Lemon Juice – 2 tsp
Water if needed for grinding

Method:

Take all the chutney ingredients in a blender and make it into a smooth puree.

Now lets make the bread omelet. Take a bowl and crack open 2 eggs, season with salt and pepper. Mix well to combine.

Heat oil in a frying pan. Pour half of the egg mix in and spread it out.

Now place 4 slices of bread over the egg. Pour the remaining half of the egg mix over the bread and spread well.

After few mins once the egg is cooked. Flip over and cook on other side too.

When the other side is cooking, spread some chutney over the bread. Place cheese slices over it and fold them over.

Serve immediately with ketchup.


Pictorial:

Start by making the mint chutney
Add some lemon juice
Make into a puree
Crack open couple of eggs
Season with some salt and pepper
Mix well

Heat oil in a non stick pan

Add half of the egg mix in

Place 4 slices of bread

Pour the remaining egg mix over the bread

Flip over to cook

Now top with some mint chutney

Spread it out

Place some cheese, i cut a slice of cheese in half

Fold them over

Serve with ketchup..

    This is a very quick n yummy recipe. Thanks so much for sharing. I usually make the green chutney for my vegetable sandwich. Now I shall use in my bread and egg preparation too!
