This is a delicious super easy lemon bars which can be made without baking. It is perfect for parties and taste really delicious. The topping is so lemony and the base is buttery and yummy.

This is a no cook recipe and just needs few assembling. The setting agent which i used is gelatin, you can use agar agar instead of gelatin.

Preparation Time : 15 mins
Serves: 6 to 8
Ingredients:
For Crust:
Digestive Biscuits – 20 ( I used milk bikis)
Unsalted Buter – 75 grams
For Filling:
Sweetened Condensed Milk – 1 can
Lemon Juice – 1/4 cup to 1/2 cup
Lemon Zest – 2 tblspn
Gelatin – 1 tblspn
Water – 1/4 cup
Lemon Food Colouring a pinch
Lemon Essence few drops
Method:
Take cookies in a blender and crush them. Melt butter in a sauce pan, Add powdered cookies and mix well. Spoon this in a pan and press evenly so it is well lined. Chill in fridge till needed.
Take gelatin in a bowl, add in water and let it soak for 5 mins. Now take it in a sauce pan and heat gently so it is melted.
Now take condensed milk, lemon juice and zest. Mix well. Add food colouring and lemon essence if needed.
Add the melted gelatin to this and mix well.
Pour this over the crust and chill in fridge for 3 to 5 hours.
Now cut into bars and serve.

cover and chill this for 4 to 6 hours |
now remove them |
slice it into bars |
