    Mixed Vegetable Kootu Recipe with step by step pictures. This is made with Vegetables and Coconut. A quick side dish that you can make in less than 30 mins for serving with rice.

    Mixed Vegetable Kootu

    I make kootu with whole lot of veggies. But i have never made a mixed veg kootu, few days back i decided to make this and guess what it taste so yummy. Plus it is so healthy too..

    Ingredients for Mixed Vegetable Kootu

    • Oil - 1 tsp
    • Onion - 1 medium size chopped
    • Tomato - 1 chopped
    • Potato - 1 peeled and cubed
    • Beans - 1 chopped
    • Carrot - 1 chopped
    • Salt to taste
    • Turmeric Powder / Manjal Podi - 1 tsp
    • Yellow Moong Dal / Pasi Paruppu - ½ cup
    For Grinding:
    • Coconut - ½ cup grated
    • Cumin Seeds / Jeerakam - 1 tsp
    • Green Chillies - 3
    For Seasoning:
    • Coconut Oil - 1 tbsp
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Curry leaves - 1 sprig

    How to make Mixed Vegetable Kootu

    1. Cook moong dal till it gets soft. Set aside.
    2. Grind ingredients given for grinding to a smooth paste. Set aside.
    3. In a pan, heat 1 teaspoon oil and add in onions, tomatoes and saute for couple of mins.
    4. Add in all veggies and salt. Mix well. Saute for 5 mins or so.
    5. Now add a splash of water and cover with a lid. Simmer the pan and cook on low
    6. heat for 10 to 15 mins till veggies are cooked.
    7. Now add in cooked dal, coconut masala, turmeric powder and mix well.
      Simmer for 5 mins or so.
    8. Now make seasoning by heating oil and crackling mustard, urad dal and curry leaves.
    9. Pour this into the curry and mix well.
    10. Serve.

    Mixed Vegetable Kootu Recipe step by step picture 

     
    Take all your ingredients
    start by cooking dal, take it in a pot, cover with water
    cook till done
    take coconut, chillies and cumin seeds in a grinder
    make it into a smooth puree
    Heat oil in a pan
    add in onions and tomatoes
    give a quick toss
    add in beans, potatoes and carrots
    saute for 5 mins or so
    add salt
    little water
    cover and cook
    now veggies are done
    add dal
    mix well
    add in coconut masala
    add little turmeric powder
    mix well
    simmer for few mins..now curry is done
    heat little coconut oil in a pan
    crackle mustard, urad dal and curry leaves
    pour this into the curry
    mix well
    done
    serve

      Just saw this Aarti.Thank you for sharing! I'm looking to make this tonight for around 30 people to go with chapathis along with a few other dishes also. Do you think it is a good idea to add ginger to this?
