I make kootu with whole lot of veggies. But i have never made a mixed veg kootu, few days back i decided to make this and guess what it taste so yummy. Plus it is so healthy too..

Serves : 4
Oil – 1 tsp
Onion – 1 medium size chopped
Tomato – 1 chopped
Potato – 1 peeled and cubed
Beans – 1 chopped
Carrot – 1 chopped
Salt to taste
Turmeric Powder / Manjal Podi – 1 tsp
Yellow Moong Dal / Pasi Paruppu – 1/2 cup
For Grinding:
Coconut – 1/2 cup grated
Cumin Seeds / Jeerakam – 1 tsp
Green Chillies – 3
For Seasoning:
Coconut Oil – 1 tblspn
Mustard Seeds / Kaduku – 1 tsp
Urad dal / Ulundu Paruppu – 1 tsp
Curry leaves – 1 sprig
Method:
Cook moong dal till it gets soft. Set aside.
Grind ingredients given for grinding to a smooth paste. Set aside.
In a pan, heat 1 tsp oil and add in onions, tomatoes and saute for couple of mins.
Add in all veggies and salt. Mix well. Saute for 5 mins or so.
Now add a splash of water and cover with a lid. Simmer the pan and cook on low heat for 10 to 15 mins till veggies are cooked.
Now add in cooked dal, coconut masala, turmeric powder and mix well.
Simmer for 5 mins or so.
Now make seasoning by heating oil and crackling mustard, urad dal and curry leaves. Pour this into the curry and mix well.
Serve.

take coconut, chillies and cumin seeds in a grinder |
make it into a smooth puree |
Heat oil in a pan |
add in onions and tomatoes |
give a quick toss |
add in beans, potatoes and carrots |
saute for 5 mins or so |
add salt |
little water |
cover and cook |
now veggies are done |
add dal |
mix well |
add in coconut masala |
add little turmeric powder |
mix well |
simmer for few mins..now curry is done |
heat little coconut oil in a pan |
crackle mustard, urad dal and curry leaves |
pour this into the curry |
mix well |
done |
serve |

Just saw this Aarti.Thank you for sharing! I'm looking to make this tonight for around 30 people to go with chapathis along with a few other dishes also. Do you think it is a good idea to add ginger to this?
