I make kootu with whole lot of veggies. But i have never made a mixed veg kootu, few days back i decided to make this and guess what it taste so yummy. Plus it is so healthy too..
Cooking Time : 45 mins
Serves : 4
Oil - 1 tsp
Onion - 1 medium size chopped
Tomato - 1 chopped
Potato - 1 peeled and cubed
Beans - 1 chopped
Carrot - 1 chopped
Salt to taste
Turmeric Powder / Manjal Podi - 1 tsp
Yellow Moong Dal / Pasi Paruppu - ½ cup
Coconut - ½ cup grated
Cumin Seeds / Jeerakam - 1 tsp
Green Chillies - 3
Coconut Oil - 1 tblspn
Mustard Seeds / Kaduku - 1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Curry leaves - 1 sprig
Cook moong dal till it gets soft. Set aside.
Grind ingredients given for grinding to a smooth paste. Set aside.
In a pan, heat 1 tsp oil and add in onions, tomatoes and saute for couple of mins.
Add in all veggies and salt. Mix well. Saute for 5 mins or so.
Now add a splash of water and cover with a lid. Simmer the pan and cook on low heat for 10 to 15 mins till veggies are cooked.
Now add in cooked dal, coconut masala, turmeric powder and mix well.
Simmer for 5 mins or so.
Now make seasoning by heating oil and crackling mustard, urad dal and curry leaves. Pour this into the curry and mix well.

|start by cooking dal, take it in a pot, cover with water|
|cook till done|
|take coconut, chillies and cumin seeds in a grinder|
|make it into a smooth puree|
|Heat oil in a pan|
|add in onions and tomatoes|
|give a quick toss|
|add in beans, potatoes and carrots|
|saute for 5 mins or so|
|cover and cook|
|now veggies are done|
|add in coconut masala|
|add little turmeric powder|
|simmer for few mins..now curry is done|
|heat little coconut oil in a pan|
|crackle mustard, urad dal and curry leaves|
|pour this into the curry|
