About Strawberry Cheesecake Recipe
A cheesecake is a creamy dessert with a biscuit layer and a cream cheese layer on top. The main, thickest layer is made up of a soft, fresh cream cheese, sugar, cream and flavourings. The bottom layer, it is usually a crust or base made of crushed cookies, graham crackers, pastry, or occasionally sponge cake.
This recipe for strawberry cheesecake requires no special equipments and can be put together in less than 15 minutes. I make them often for parties and get together. Over the years I have made tons of cheesecake recipes, but I used to complicate things with so many steps. Not anymore, this recipe is my recent invention and I am already hooked to it. It is simple and easy with no fail steps.

How to Make Easiest Cheesecake Ever
The recipe for no bake strawberry cheesecake requires three steps. The biscuit base, creamy cheesecake filling and the berry topping. Always start with biscuit base, crush biscuits slightly. I like texture in my crust, so I use a rolling pin and crush the biscuits in a bowl. Add melted butter to the biscuit and combine well. You can use this to line the pan. Once the base is lined place the pan in fridge or freezer to set.
To make cheesecake filling, it is super easy. Take cream cheese, cream, powdered sugar, vanilla, salt, lemon juice in a bowl and use an electric beater to combine this for just 40 seconds to 1 minute. If you don't have an electric beater you can mix this with whisk. Spoon this over the crust and place in fridge overnight.
Now make the topping. Cook strawberries with sugar and lemon juice till thick and jam like. I used date sugar, you can use any sweetener. If you don't have access to fresh strawberries, you can opt for the easy step of using strawberry jam or preserve.

Ingredients
Biscuits - I used digestive biscuits for this cheesecake recipe. It is light and dry biscuit which has texture which absorbs the butter better. You can use graham crackers or any biscuits that you might have.
Butter - you can use both unsalted or salted butter. I prefer salted butter which adds slightly flavour to the biscuit base.
Cream Cheese - You need good amount of cream cheese for this recipe. Make sure to remove the cream cheese from fridge at least 30 minutes so it comes to room temp which makes the cream cheese whip better.
Cream - I used fresh cream for this. If you are using amul cream, make sure to use only the thickest part of the cream. You can use heavy cream or whipping cream. Make sure your cream is fridge cold.
Sugar - icing sugar, confectioners sugar or powdered granulated sugar can be used in this cheesecake.
Flavourings - as far as flavouring, I like to use lemon juice, salt, vanilla. These three provide taste and flavour.
Strawberry Topping - for the topping, i used strawberries and cooked it with sugar and lemon juice.

Step by Step Pictures
1)take digestive biscuits in a bowl. Instead of digestive biscuits, you can use graham crackers or any light biscuits.

2)I used a rolling pin to crush them. Since I like to have different texture in the crust, i use rolling pin. You can powder this in blender or even in food processor.

3)Add in melted butter and mix well.

4)The mixture should resemble wet sand. if you find the mixture too dry, You can add butter accordingly.

5)Press the biscuit crumbs on a round cake pan. I used cake pan with removable base. which makes the un-moulding part easier.

6)Press gently yet firmly to line the biscuit base. Place this cake pan in fridge or freezer for at least 30 minutes.

7)Now to make the cheesecake filling, it is super easy. Take cream cheese, cream, powdered sugar, vanilla, salt, lemon juice in a bowl.

8)Use an electric beater to combine this for just 40 seconds to 1 minute. If you don't have an electric beater you can mix this with whisk.

9)Spoon the thick cream cheese mixture over the biscuit base.

10)Spread evenly using a spatula. Now place the cake pan in fridge and let it set overnight.

11)Now make the topping. Take strawberries.

12)Chop them into small pieces.

13)Cook strawberries with sugar and lemon juice till thick and jam like. I used date sugar, you can use any sweetener.

14)If you don't have access to fresh strawberries, you can opt for the easy step of using strawberry jam or preserve.

15)Spread the strawberry jam over the cheesecake filling. Place this in fridge until ready to serve.

16)Slice and serve.

- 200 grams Digestive Biscuits
- 100 grams Butter melted
Cheesecake Filling
- 400 grams Cream Cheese
- ¾ cup Powdered Sugar 150 grams
- ½ cup Cream
- 2 teaspoon Lemon Juice
- 1 teaspoon Vanilla Extract
- ¼ teaspoon Salt
For Strawberry Topping
- 2 cups Strawberries chopped finely
- ¼ cup Sugar
- 2 teaspoon Lemon Juice

@aarthiSorry u cannot make whipping cream at home, even if you make you cannot whip it like store bought. You can get whipping cream powder in online stores. And i will share jam recipe soon, yes u can put fresh strawberry on top to. But make sure you cut it and sprinkle sugar over it. This way it will be sweet and saucy

After the final step where should we place the cake pan ,in freezer or normal compartment of fridge. My cake tasted very nice but had ice crystals in between.what mistake could i have made.
