I always have on hand, they are such a versatile ingredient in indian cooking. You can not only make yummy porridge out of it, but you can make delicious breakfast from it too, like your basic idli, pongal, dosa, kuzhi paniyaram, kozhukattai, upma and this uthappam..

I have quite few other oats recipes also in this blog..U can check all of them right here. Now this uthappam is great for breakfast, since it is topped with all healthy veggies, it looks colourful so your kids will surely love it..You can serve this with any chutney of your choice..But tomato chutney and coconut chutney goes well with it..Even sambar is not a bad idea..
Preparation Time : 10 mins
Cooking Time : 2 to 3 mins per batch
Serves : 4 to 5

Ingredients:
Instant Oats / Quick Cooking Oats – 2 cups
Rava / Sooji / Semolina – 1/4 cup
Thick Unsour Curd / Yogurt – 1 cup
Water as needed
Green Chillies – 2 finely chopped
Ginger – 1 tblspn grated
Curry leaves a sprig
Salt to taste
Eno Fruit Salt / Baking Soda – 1 tsp
Oil as needed

For Topping:
Carrot – 1 large grated
Capsicum – 1/2 cup chopped finely
Onion – 1 medium size chopped finely
Tomatoes – 1 chopped finely (seed removed)
Method:
Mix all the ingredients for topping in a bowl. Set aside till use.
Take oats in a blender and make it into a fine powder. Add in curd and grind it to a smooth paste.
Take this in a bowl and add some water to it.
Now add in sooji, ginger, chillies, curry leaves, salt and mix well. Let it sit for 10 mins. Add more water if needed.
Now add in eno salt and mix well.
Heat a non stick tawa and use a paper towel to grease it lightly with some oil.
Pour a ladleful of batter in it, sprinkle with the topping and drizzle some oil. Cover with a lid and cook on a medium heat for 2 mins.
Flip over and cook for a min on other side too.
Remove and serve with any chutney.

Try this way. Keep a ring( metal). Spread cut vegetables in the ring. Pour the batter a little thick. Pour oil as it cooks flip it over. And cook for a few seconds . Remove ring when you flip.
    This worked out better.
    Nice recipe.
