Vegetable Quesadilla Recipe with step by step pictures. This recipe is loaded with crunchy vegetables and melting cheese which can be served for breakfast, lunch, dinner, or even as a snack.
Vegetable Quesadilla
Quesadilla is my favourite. It is cheesy and you make it with any ingredient which you have on hand. I have two variation of quesadilla in my blog, i will be sharing many more variations soon as well.This recipe is quite simple with veggies and guacamole.

Ingredients for Vegetable Quesadilla
- Wheat Tortilla - 3 to 4
- Oil - 1 tsp + as needed for pan frying
- Garlic - 2 cloves chopped finely
- Onion - 1 medium size sliced thinly
- Carrot - 1 medium size sliced thinly
- Capsicum - ½ sliced thinly
- Chilli Flakes - 1 tsp
- Oregano - ½ tsp
- Cornflour Cornstarch - 1 tsp
- Tomato Ketchup - 1 tbsp
- Salt to taste
- Guamocole as needed
- Cheese Slices as needed

How to Make Vegetable Quesadilla
- Heat oil in a pan, add in garlic and saute for 30 sec. Add in onions and salt. Saute for 2 mins.
- Add in carrots and saute for 3 to 5 mins. Now add in capsicum and saute for 2 mins or so.
- Now add in ketchup and mix well. Add in oregano and chilli flakes.
- Mix cornflour with some water and pour it over the veggies mix. Toss well.
- Take tortilla in a plate, spread some guacomole as thin layer.
- Now spread some veggies mix on one side of the tortilla.
- Pace some cheese slice on top, cover with the other half of tortilla. Spread oil on one side of the tortilla.
- Put tortilla on tawa, cook till golden on both sides.

Vegetable Quesadilla Recipe
