Rainbow Zebra Cake Recipe to Welcome New Year 2016!

2015 was a wonderful year for me, it was almost like a roller coaster ride, there were many ups and down in my personal life.But when considering my blog it was a fantastic year. I am gonna start this newyear with colours and happiness. So i have a wonderful colourful cake for you all..It is my rainbow zebra cake which will bring happiness and joy in your faces when you look at it..

This cake may look complicated, but it is such a easy cake to make. Take a look at the step by step pictures and you will be amazed how easy it is. Make this cake on any occasion and make it very special..

Preparation Time : 1 hour
Baking Time : 45 mins
Chilling Time : 1 hour and 30 mins
Makes one 8 inch cake

Ingredients:

For Cake:
All Purpose Flour / Maida – 2 cups /240 grams
Sugar – 1.5 cup powdered / 300 grams
Baking Powder – 4 tsp
Vanilla Essence – 1 tblspn
Pineapple Essence – 2 tsp (optional)
Oil / Cooking Oil – 3/4 cup / 180 ml
Milk – 1/2 cup / 120 ml
Eggs – 4
Food Colours ( Black, Red, Orange, Green, Yellow, Pink, Blue)
For Vanilla Buttercream:
Unsalted Soft Butter – 1/2 cup
Confectioners Sugar / Icing Sugar – 2 cup
Vanilla Essence – 1 tsp
Milk – 1 tblspn or as needed
For Fondant:
Confectioners Sugar / Icing Sugar – 1 cup
Butter – 1 tblspn
Milk – 1 tsp or as needed
Black Food Colouring as needed
(MY 1 CUP MEASURES 240 ML)
Method:
Preheat oven to 180 degree C. Line a 8 inch / 20 cm cake pan with parchment paper and oil the bottom and sides really well. Set aside.
Take flour, baking powder in a bowl and mix well. You can sieve this if you want.
Now take eggs, sugar, vanilla and pineapple essence in a bowl and use a beater to whip this till it is creamy and pale. it will take 4 to 5 mins.
Now add in oil and whip again.
Now add in half of the flour mix and fold gently. Add in entire milk and the remaining flour and fold gently.
Now divide the batter into two bowls. IN one bowl add black food colour and fold gently. You can divide this batter into 6 bowls if you want. 
Divide the other bowl of batter into 6 small bowls.
Now add each food colour into each batter and mix gently. Set aside.
Now take the cake pan and start with any colour as you wish, pour it in the center, Now pour one portion of the black batter and continue this alternating the batter. You should add any coloured batter and then black batter..this is the order. CHECK THE STEP BY STEP IMAGES FOR CLEAR DETAIL.
Once you have done. Pop this in oven and bake for 45 mins or till a toothpick inserted comes out clean. Remove it from oven and cool it in tin for 15 mins. Now remove it from tin and cool it down completely.
Meanwhile prepare buttercream, check this link for details. 
Now take the cake and slice the top dome portion off. Spread a thin layer of buttercream over the cake, this is called crumb coating. Stick the cake in fridge for 30 mins. 
Once the cake is chilled. Spread remaining frosting on the cake and spread evenly on the top and sides. Now put it back in fridge for 1 hour.
While the cake is chilling, make the instant fondant. Mix icing sugar, milk and butter till it resembles coarse crumbs, now add in black food colour and mix well. Add more milk till it forms a smooth dough. 
Now take this black fondant in parchment paper and sprinkle with some more icing sugar. Roll it into sheet and slice it in slices so it has one pointing edge and other is little wider. 
Now decorate the cake with this so it resemble zebra stripes…CHECK THE STEP BY STEP IMAGES FOR CLEAR DETAIL.
Now slice the cake, admire it and devour it..

Take all your ingredients for cake
Take flour in a bowl
add in baking powder
mix well and set aside
Crack 4 eggs in a large bowl
add in powdered sugar..i powdered some regular sugar in a blender till fine
add in vanilla essence and pineapple essence. I added pineapple essence because i got egg smell from the
cake when it is baked, this pineapple essence will remove that
Use a beater to whip this up
Now it is pale and creamy
add in oil
and beat this again for few seconds
Now add in half the flour mix
fold gently
add in all the milk
add in remaining flour mix and fold again gently
Dont over mix…
Divide the batter into two bowls
Now take your food colours
to one half of the batter, add black food colouring
give a good mix and set aside.
Divide the other half of the batter in 6 bowls
add your favourite colours to each one and mix gently..
Here i used red, pink, blue, green, orange and yellow
I took a 20 cm cake pan, 8 inch pan and lined it with 
parchment paper and oiled it really well
First i started with red batter
now pour one portion of black batter..You have to divide the black batter into 6 bowls if you want..Or you can eyeball it
add green one
Now black
now orange
now black
now yellow
now black
now pink
now black
now blue
now black
ALL DONE..time to bake
Now it is baked
Cool it down  for 15 mins and remove from pan..
set aside to cool completely
When the cake is cooling, i made a small batch of 
vanilla buttercream
Now take your cake and slice the top dome off
spoon some buttercream on top
and coat it evenly, this is called crumb coating..
Now chill this in fridge for 30 mins
add some more buttercream
And coat it well..you can put this in fridge for another 1 hour
In the mean time lets make a quick fondant
Take confectioners sugar or icing sugar in a bowl
add in soft butter
add little milk
rub well
when it resembles coarse crumbs like this
add in black food colour
knead to a dough
Now roll this between two sheets of parchment..you can dust it with some icing sugar for easy rolling
once it is rolled like this
cut it like this
now create zebra pattern on top of the cake
DONE..although it is not perfect..I loved it
Now time to slice..MOMENT OF TRUTH
TA DA! WOW…HAPPY NEW YEAR EVERYONE!

    Can you use 2 tsp chocolate essence +1 tsp vanilla essence instead of 2tsp pineapple and 1 tsp vanilla
