Paneer Pav Bhaji Recipe – Mumbai Street Food Recipe

Paneer pav bhaji is one recipe which i made few weeks back and loved it to the core. Many recipe crumbled in the paneer into the mix and make this. but this is how i had in a restaurant here and it was delicious.

The key for this is to use generous butter, it makes it more tasty and delicious. Loved it piping hot with bhaji.

Preparation Time : 10 mins
Cooking Time : 30 to 45 mins
Serves: 4


Ingredients:

Oil – 2 tblspn
Butter – 2 tblspn + more
Cumin Seeds – 1 tsp
Onion – 1 large chopped finely
Ginger Garlic Paste – 1 tblspn
Tomatoes – 4 large chopped finely
Green Chilli – 2 chopped finely
Capsicum / Bell Pepper – 1/2 cup chopped finely
Paneer – 1 cup chopped finely
Potato – 1 peeled and chopped
Carrot – 1 chopped
Broccoli – 1/2 cup
Cauliflower – 1/2 cup
Beetroot – 1/4 cup chopped
Turmeric powder – 1 tsp
Pav Bhaji Masala Powder – 1 to 2 tblspn
Kashmiri Chilli Powder – 1 tblspn
Salt to taste
Coriander leaves a handful finely chopped

Method:

Take carrot, potato, cauliflower, broccoli, beetroot in a pressure cooker, add water and pressure cook for 2 to 3 whistle.

Now heat oil in a pan, add cumin and let them sizzle.

Add onion, capsicum, green chillies and saute them for 2 mins or so.

Add in ginger garlic paste and cook for a min.

Add in tomatoes and cook that down till it gets mushy.

Add in pav bhaji masala powder , turmeric powder and salt and mix well.

Add in veggie mix along with any liquid. And mash it well using a spoon.

Now add in kashmiri chilli powder and mix well.

Add in paneer and simmer for 10 mins.

Add in coriander leaves and mix well.

When serving, heat butter in a pan, spoon some pav bhaji mix in the pan and cook for 2 mins, now melt some more butter in the sides, place slit pav buns and toast till golden.

Remove and serve with bhaji.

take all veggies in a pressure cooker and cook for 3 whistle

prepare other ingredients

heat oil in a pan, add cumin seeds

add onions, green chillies and bell peppers

saute till it gets transparent

add ginger garlic paste

cook that down

add tomatoes

add salt

and some turmeric powder

mix well

cook this till the tomatoes get mushy

add some water

cook that for few mins

add veggies

mash it well

like this

add kashmiri chilli powder for colour

mix well

add paneer

mix well

add coriander leaves

done

for serving, melt butter in a pan

spoon the bhaji in

melt some more butter

toast your pav buns

done
