Spicy Vegetable Stew
Stew is a flavourful curry, which is a little runny but it is packed with flavours. Normally few vegetables are added into it to make it even more tasty.Stews are made differently each time, they are normally less spicy and white in colour. But i made it extra spicy by adding some spice powders

Ingredients for Spicy Vegetable Stew
- Coconut Oil - 1 tbsp
- Fennel Seeds / Saunf / Sombu - 1 tsp
- Onion - 1 medium size chopped finely
- Green Chilli -2 slit
- Ginger Garlic Paste - 1 tbsp
- Tomato - 1 large chopped finely
- Chilli Powder - 1 tsp
- Turmeric Powder - 1 tsp
- Garam Masala Powder - 1 tsp
- Carrot - 1 large chopped finely
- Beans - 10 chopped finely
- Potato - 1 peeled and cubed
- Frozen Peas - 1 cup
- Coconut Milk - 2 cups
- Water as needed
- Salt to taste
How to make Spicy Vegetable Stew
- Heat oil in a kadai, Add in fennel seeds and let them splatter.
- Add in onions, green chillies and saute them for 5 mins or so.
- Add in ginger garlic paste and saute for a min.
- Add in tomatoes and cook till mushy.
- Add in the spice powders and mix well.
- Add in veggies and salt and mix well. Add in water and cook for 15 mins or so, till the veggies are done.
- Add in coconut milk and mix well. Simmer for 5 mins or so.
- Add in peas and mix well.
- Serve.
