    Spicy Vegetable Stew Recipe with step by step pictures. This is made with Vegetables, Coconut Milk and Garam Masala.

     

    Spicy Vegetable Stew

    Stew is a flavourful curry, which is a little runny but it is packed with flavours. Normally few vegetables are added into it to make it even more tasty.Stews are made differently each time, they are normally less spicy and white in colour. But i made it extra spicy by adding some spice powders

    Ingredients for Spicy Vegetable Stew

    • Coconut Oil - 1 tbsp
    • Fennel Seeds / Saunf / Sombu - 1 tsp
    • Onion - 1 medium size chopped finely
    • Green Chilli -2  slit
    • Ginger Garlic Paste - 1 tbsp
    • Tomato - 1 large chopped finely
    • Chilli Powder - 1 tsp
    • Turmeric Powder - 1 tsp
    • Garam Masala Powder - 1 tsp
    • Carrot - 1 large chopped finely
    • Beans - 10 chopped finely
    • Potato - 1 peeled and cubed
    • Frozen Peas - 1 cup
    • Coconut Milk - 2 cups
    • Water as needed
    • Salt to taste

    How to make Spicy Vegetable Stew

    1. Heat oil in a kadai, Add in fennel seeds and let them splatter.
    2. Add in onions, green chillies and saute them for 5 mins or so.
    3. Add in ginger garlic paste and saute for a min.
    4. Add in tomatoes and cook till mushy.
    5. Add in the spice powders and mix well.
    6. Add in veggies and salt and mix well. Add in water and cook for 15 mins or so, till the veggies are done.
    7. Add in coconut milk and mix well. Simmer for 5 mins or so.
    8. Add in peas and mix well.
    9. Serve.

    Ingredients

    Spicy Vegetable Stew Recipe step by step picture

     

    Chop veggies finely
    Heat oil in a kadai
    add in fennel seeds
    add in onions and green chillies
    saute for few mins
    add in ginger garlic paste
    mix well
    add in tomatoes
    cook till mushy
    add in turmeric and chilli powder
    add in garam masala powder and mix well
    veggies
    mix well
    add in salt
    cover with water
    now the veggies are done
    add in coconut milk
    mix well
    add in peas
    mix well and let it heat through
