    Pumpkin Thoran Recipe

    Pumpkin thoran also known as Pumpkin Stir Fry is a classic Kerala style side dish that is often served as a part of Onam sadhya spread. It is made with basic ingredients like tender pumpkin, onions, coconut and spices. This thoran pairs beautifully with spicy kulambu, as the gentle sweetness of pumpkin balances well with curries and makes a complete meal.

    Stir fries make a great sidedish for rice or roti. I make different combination of them very often. This one is a quick sidedish you can make in under 30 mins. It uses a combination of pumpkin and onion and finally the whole thing is tossed with dessicated coconut.

    I really enjoy this thoran because of the coconut added to it, which gives a fresh, delicious flavor. It is also incredibly quick and easy to prepare, which makes it ideal for busy days when you want something simple and satisfying for your meal. 

    About Stir Fry Pumpkin (Thoran)

    Pumpkin thoran, also known as Mathanga thoran, is a traditional Kerala style stir fry made using yellow pumpkin.

    It is a lightly spiced dish and commonly served with steamed rice, Kerala matta rice or as a part of festive meals like Vishu and Onam sadhya. 

    A Kerala lunch or an Onam sadhya feels incomplete without a thoran and among the many varieties like beetroot thoran, cabbage thoran, carrot thoran, this pumpkin thoran is one of the easiest and most delicious to prepare.

    Its natural sweetness and soft texture pumpkin makes the meal more comforting and flavourful.

    One of the great things about thoran is its simplicity. With minimal ingredients and effort, it comes together into a delicious side dish in minutes. 

    The combination of soft, mildly sweet pumpkin with coconut creates a wholesome and satisfying meal that feels both light and flavourful. This thoran gets its signature taste and aroma with the addition of coconut oil

    and makes it even more delicious. It perfectly complements everyday meals like sambar rice, curd rice and puli kulambu. 

    Ingredients

    • Onion : Onions are finely chopped and it adds mild sweetness to the stir fry. It softens when cooked and blends well with pumpkin. 
    • Pumpkin : Pumpkin is the main ingredient that provides the flavour and mild sweetness to the dish. It becomes soft when cooked, but still retains a slight crunchy bite that goes well with coconut and spices. 
    • Oil : Use coconut oil for the authentic aromatic flavour and taste. It helps cook the spices, vegetables evenly and gives traditional Kerala cuisine aroma. 
    • Salt : Salt enhances the overall flavour of the dish. 
    • Spices : Turmeric powder and chilli powder provides the necessary color and heat to the thoran. 
    • coconut : I have used desiccated coconut. You can also use freshly grated coconut for a rich flavor. It gives a sweet taste and enhances the overall taste of thoran. 

    Step by Step Pictures

    1)Heat oil in a pan. Add in onions and pumpkin in hot oil.

    2)Stir fry this for couple of minutes until the raw smell leave from it.

    3)Add in salt and turmeric powder into this.

    4)Toss well. Cook covered for 5 to 7 minutes until the pumpkin is cooked through.

    5)Add in red chilli powder and mix well.

    6)Add in coconut and toss through.

    7)Stir fry the coconut for 2 to 3 minutes.

    8)Serve hot.


    Expert Tips

    Cut evenly : chop the pumpkin into small, even sized cubes. This ensures they cook quickly and uniformly. 

    Control moisture : Use coconut that is not too moist. This helps maintain the dry texture of the thoran and prevents it from becoming soggy.

    Tempering ( optional ) : You can temper the thoran with mustard seeds, urad dal in hot oil before adding other ingredients. This adds extra flavour to the dish. 

    Avoid overcooking : Cook the pumpkin until it is just soft but still holds its shape. Overcooking can make it mushy. 

    Storage : Let the pumpkin thoran cool completely before storing. Place it in an airtight container and refrigerate for 2 to 3 days. 

    Serving: Pumpkin thoran is traditionally served with matta rice or regular rice along with sambar, puli kuzhambu, rasam and curd. It also served as a part of Onam sadhya meal spread. 

    FAQ 

    Q. Can I make this without onions ? 

    Yes, some traditional versions of pumpkin thoran skip onions, especially when served as part of festive meals. The dish still tastes delicious and flavourful. 

    Q. What is the difference between desiccated coconut and fresh coconut ? 

    Fresh coconut has a soft, fresh texture and is naturally rich in moisture. On the other hand, desiccated coconut is dried and shredded with low moisture content. Traditionally, fresh coconut is used for making curries, thoran, stir fries, but desiccated coconut can be used as a substitute. 

    Q. Can I use other oils instead of coconut oil ?

    Yes, you can use any cooking oil of your choice. But coconut oil is traditionally used in the dish for its authentic Kerala flavour and aroma. 

    Q. Can I make thoran with other vegetables ? 

    Absolutely ! Thoran is a versatile dish that can be made with other vegetables like cabbage, beans, carrot, beetroot and more.

    Equipment

    Kadai or Wok

    Ingredients
      

    • 2 tablespoon Coconut Oil
    • 1 large Onion peeled & chopped finely
    • 4 cups Pumpkin peeled and chopped finely
    • 1 teaspoon Salt to taste
    • 1 teaspoon Turmeric powder
    • 2 teaspoon Red Chilli powder
    • 1 cup Coconut grated

    Instructions
     

    • Heat oil in a kadai, add in onions and pumpkin and toss well. Season with salt and turmeric powder.
    • Now mix this well and cook on a low heat covered for 5 to 8 mins till pumpkin is cooked. Add in chilli powder and mix well.
    • Add in coconut and toss well. Cook this on high heat for 5 mins so the coconut coats the pumpkin well. Serve.
