Stir fries make a great sidedish for rice or roti. I make different combination of them very often. This one is a quick sidedish you can make in under 30 mins. It uses a combination of pumpkin and onion and finally the whole thing is tossed with dessicated coconut.

Salt to taste

Now mix this well and cook on a low heat covered for 5 to 8 mins till pumpkin is cooked.
