    Thekua Cookies / Khajur / Khajuri / Khajoor - For Indian Cooking Challenge

    As soon as srivalli announced ICC as Thekua, I was totally ready to take the challenge…Because I loved that recipe as soon as I saw that. This is a typical cookie recipe originated from Bihar. This is their traditional dish which is made for all occasions.

     I can give you few suggestion for you to try this recipe. You could use jaggery instead of sugar, since jaggery is used traditionally. Before using it, you dissolve the jaggery in some water, drain it and use it. You could use some fennel powder in this too.

    Ingrediants:

    Wheat Flour / Atta - 1 cup / 250 gms

    Rawa / Sooji / Semolina - 3 tblspn

    Copra / Dry Coconut / Desicated Coconut- 1 tblspn

    Sugar - 3 tblspn Powdered ( use as per your taste)

    Ghee / Oil - 2 tblspn

    Milk- as per to knead

    Cardamom / Yelakai - 4 pods

    Oil for Deep Frying

    Method:

    Powdered sugar and cardamom in a blender and set aside.

    Now in a mixing bowl add wheat flour, rawa, coconut, powdered sugar mixture, oil and mix well to form in a coarse crumbly mixture.

    Sprinkle some milk and knead into a stiff dough. Don't add too much of milk.

    Now roll this with a rolling pin so that it gets 1 inch thickness. Use your favorite cookie cutter or any lid and cut out your favorite shape.

    Heat oil for deep frying and fry this till they turn golden brown. Drain in a kitchen paper.

    Once it gets cool down.. store it in air tight container for upto a month.
