Spaghetti Aglio e Olio / Spaghetti Aio Oio / Spaghetti with Olive Oil, Garlic & Red Chilli Flakes

I was quite surprised when i came across this recipe, because i always thought that pasta taste good when it is had with some strong sauces like tomato sauce or cheese sauce. But this recipe calls for only garlic, chilli and olive oil. So i decided to give it a try. Yesterday i was starving in hunger, so decided to try this because it takes only minutes to make. Frankly speaking the minute when the pasta is done the flavourful oil is done. Then you have to just toss the pasta in this and dig in straight away.

Spaghetti – 250 gms
Olive Oil – 6 tblspn
Garlic – 6 fat cloves chopped finely
Red Chilli Flakes – 1 tsp
Coriander leaves/ Cilantro – 3 tblspn finely chopped
Salt to taste
Water – to cook pasta

Bring water to a boil and add salt to it.

Now add in the pasta and cook till al dente or as per package instructions.

Drain it and wash with with plenty of cold water till all the starch goes away.

Now heat olive oil in a pan and add garlic immediately, so that garlic flavours the oil.

When garlic turn light golden. Add chilli flakes and mix well.

Now add in coriander leaves and switch off the flame.

Add the pasta in and toss well.

Serve immediately.

  1. Nice one! I've always tried this with chilli powder instead of flakes.. like this idea!

  2. me encanta!! fácil de hacer y sano. lo preparo muchas veces en casa. un beso

  3. A little tip, to make these even better... don't rinse the pasta, because sauce doesn't stick as well. Instead, reserve about one cup of the pasta sauce and add that to the oil and chili peppers. It makes the sauce thicken, and adds flavor. This is one of my favorite fast foods to make at home.

  4. Love the dish...

There's a yummy award waiting for you at my space :-) Do collect it. Congrats!!

  5. I make this at home...My son loves spaghetti...Awesome Aarthi...

  6. Try using parsley or basil instead of the coriander. Will be a truer Italian flavour and if u like onion dice one up and add with the garlic! So good

  7. Thank you. Very easy to make. Was quite apprehensive cos of the lack of sauce. In the end it turned out to be yummy. Perfect dish to make when you are running out of time.

  8. Very easy and quick recipe. Thanks for sharing. To make it true italiano , i added oregano and basil with thyme (this is optional).

  9. Hi aarthi, my inspiration for trying out new things in my kitchen. I have tried few of the recipes and turned out to be wonderful. Ur pictorial display helps to understand the process better. 10. hi aarti, i luv all ur recipes have tried ur rice varieties, like peas rice, biryani, have tried soya fries, peas gravies, garlic pastas, and nans luvd them all. they hv all been a hit at home, thanks for all of it. i m writing to request u some new pasta, spagetti recipes, i m a complete flop in spagetti, its because i dont likke tomato flavours n i hv been trying spagetti without tomato, i m looking for some really spicy tomato free version of spagetti, this is one i m going to try, can u post more for me plz.

  11. n yes ever since master chef 4 strtd i was thinking of suggesting you to join master chef India.i can then tell my parents that u r the one from whom i learnt to cook everything i've been cooking so far.

  12. Hi. I make this often due to its simplicity. Coriander is not an Italian herb. You need to use sweet basil instead. The addition of coriander takes it from an Italian dish to an Indian one. Some shavings of Parmigiano Reggiano elevate it to the sublime.
