I wanted to share a restaurant style actually it is thattukada style vegetable salna recipe in this blog. I make my vegetable korma or curry in a whole lot of ways, but i think i haven't shared much in this blog. Will do it soon..I will say this is one of the best salna you will ever make and taste.

Ingredients for Vegetable Salna Recipe
For Sauteing & Grinding:
- Oil - 1 tbsp
- Fennel Seeds / Sombu / Saunf - 1 tbsp
- Cinnamon / Pattai - 2 cm piece
- Cardamom Pods / Yelakai - 4
- Cloves / Krambu - 4
- Cumin Seeds / Jeerakam - 1 tsp
- Kalpasi / Black Stone Flower - 2 piece
- Onions - 1 large sliced thinly
- Ginger - 2 cm piece peeled and chopped
- Garlic - 4 cloves peeled
- Tomatoes - 2 large chopped
- Coriander leaves - 1 cup
- Coconut - ½ cup grated
For Salna:
- Oil - 2 tbsp
- Curry leaves - a handful
- Carrots - 1 medium size chopped into small cubes
- Beans - 6 chopped into small cubes
- Potato - 1 peeled and chopped into small cubes
- Cauliflower - 1 cup chopped into small cubes
- Green Chillies - 2 slit
- Chilli Powder - 2 tsp
- Coriander Powder / Malli Podi - 1 tbsp
- Turmeric Powder / Manjal Podi - 1 tsp
- Cumin Powder / Jeera Podi - 1 tsp
- Garam Masala Powder - 2 tsp
- Salt to taste
- Sugar - 1 tsp

How to make Vegetable Salna
- Heat oil in a frying pan, add in all the whole garam masala and saute for a min.
- Add in onions and saute till it is golden. Now add in ginger and garlic. Saute for a min.
- Add in tomatoes and saute till it gets mushy. Now add in coconut and fry till golden.
- Add in coriander leaves and give a stir. Take this whole thing in a blender and make it into a fine puree.
- Now heat oil in a pressure cooker. Add in some curry leaves.
- Add in the ground masala. Mix well and cook till oil separates from it.
- Add in green chillies and the spice powders and saute for a min.
- Add in vegetables, salt and sugar. Mix well.
- Add in some water and bring it to a boil. Cover and pressure cook for 1 whistle.
- Simmer the flame for 5 mins. Turn off the heat and let the steam escape all by itself.
- Open the cooker and serve.

Ingredients
- For Sauteing & Grinding:

- 1 large sliced thinly Onions
- 2 cm piece peeled and chopped Ginger
- 4 cloves peeled Garlic
- 2 large chopped Tomatoes
- 1 cup Coriander leaves
- ½ cup grated Coconut
- For Salna:
- 2 tablespoon Oil
- a handful Curry leaves
- 1 medium size chopped into small cubes Carrots
- 6 chopped into small cubes Beans
- 1 peeled and chopped into small cubes Potato
- 1 cup chopped into small cubes Cauliflower
- 2 slit Green Chillies
- 2 teaspoon Chilli Powder
- 1 tablespoon Coriander Powder / Malli Podi
- 1 teaspoon Turmeric Powder / Manjal Podi
- 1 teaspoon Cumin Powder / Jeera Podi
- 2 teaspoon Garam Masala Powder
- Salt to taste
- 1 teaspoon Sugar
Instructions

U can use ground cashews with khus khus and roasted gram dal, but coconut gives nice taste
