Preparation Time: 10 mins
Cooking Time : 5 mins for making sugar syrup
Makes - 5 to 6 popsicles (a little more than 1/2 cup measure)

Lemon Juice - 2 to 3 tblspn or to taste
Water - 1 cup

For Simple Syrup:
Sugar - 1 cup
Water - 1 cup

Start by making simple syrup, take sugar and water in a sauce pan, heat till the sugar dissolves and comes to a boil. Take it off the heat and let it cool down. Store it in a bottle in fridge for many many months.

Now take the other ingredients and simple syrup in a blender and make it into a fine puree.

Transfer this into a pourable jug, and fill the popsicle moulds. Dont fill it too much.

Pop this in the freezer and freeze for 6  to 8 hours. i freezed ovenight.

When you want to serve, run the mould in water and carefully remove it from case.

Start by making simple syrup..Measure equal amount
of sugar and water

take sugar in a sauce pan

Pour water over it

Heat it and bring it to a boil

Once it comes to a boil, take it off the heat and allow
it to cool..
You can refrigerate for many many months

Now take your other ingredients

Take a bunch of fresh washed mint leaves in a blender

add in simple syrup, this depends on your taste..

squeeze in some lemon juice..this too depends
on your taste

add some water

make it in to a fine puree

i poured this in a jug for easy filling moulds
This is the mould which i use

fill them

dont over fill, because as this freezes it expands a little

cover it up

time to freeze

I freezed it overnight

the next day, remove them from freezer

run some tap water all over it
this will make the popsicles slide out easily
