Eggless Carrot Oats Cake Recipe / Mini Carrot Bundt Cakes Recipe


I love carrot cakes a lot. I have three recipes for carrot cake in this blog. But many of my viewers asked me to share a eggless version of it. One fine day, it was tea time and i was craving something sweet with my glass of tea. So i decided to try a carrot cake with my very own recipe.

I bought a silicone mini bundt muffin tray recently and i wanted to bake something in them. So decided to try my own version of carrot cake, i made this using wheat flour, flax seed powder, oil, i even added some oats in it to make it very healthy. It turned out beautiful and loved it to the core.

Preparation Time : 10 mins
Baking Time : 15 to 20 mins
Makes : 6 mini bundt cakes

Ingredients:

Wheat Flour / Atta - 3/4 cup / 90 grams
Oats - 1/2 cup / 45 grams
Baking Soda / Cooking Soda - 1/2 tsp
Baking Powder - 1 tsp
Oil - 1/4 cup / 60 ml
Jaggery / Sugar - 1/2 cup / 90 grams
Vanilla Essence - 1 tsp
Flax Seed Powder - 1 tblspn
Warm Water - 3 tblspn
Carrot - 1 cup grated
Milk - 1/4 cup / 60 ml (add more if the batter is too thick)

Method:

Preheat Oven to 180 Degree C.

I used a silicone mini bundt pans for making this, you can use cupcake pan or a loaf pan. Since i used silicone i oiled it lightly. If you are using other pans, oil and flour it well. 

Take flax seed powder in a bowl, add in warm water and mix well. Set this aside for 5 mins.

Take wheat flour, oats, baking soda and baking powder in a bowl and mix well.

Take oil, jaggery, vanilla in a bowl and mix really well. 

Add in the flax seed mix and mix well.

Add in the flour mix and fold gently.

Add in milk and mix well.

Now add in grated carrots and fold.

Spoon into the pan and bake for 15 to 20 mins.

Remove it and let it cool for 5 mins.

Now invert it and serve warm with tea.

Take all your ingredients..You also need some milk


I used these beautiful silicone mini bundt pan which i bought recently


I brushed the inside with some oil


Set aside till use


Next you have to take 1 tblspn of flax see powder


add 3 tblspn of warm water and mix well.Set aside for 5 mins or so


Take wheat flour in a bowl


add in baking powder


and baking soda


add in oats


mix well
Take oil in a bowl


add in jaggery


add in vanilla


and the flax seed mix


mix well


add the dry mix


fold gently


i found the batter to be too thick, so i added some milk


mix well


now add in carrots


fold gently


spoon into the prepared pan


bake till done..insert a toothpick and check whether it is cooked or not


ta da


enjoy


This healthy cake is perfect with a cup of milk or tea

  3. @LoVeLy AsHflax seed powder is readily available in stores. U can replace flax seed powder with some mashed banana.

  8. Hi Aarthi..These looks really yummy ! Can i make this in pressure cooker? If yes, then do i follow the same procedure you have given for pressure cooker cake.

    How much time does it require if its made in pressure cooker ?

    Keep up the good work ! Ur blog and pictorial representation is amazing and helps amateurs like me wanting to try more recipes !

  9. @Anonymousyes u can make it in pressure cooker. the timing depends. so when cooking in a cooker always keep an eye on it. But never open it before 15 mins of their cooking time.

    My silicone bundt pan too same as yours but when I tried in oven for first time fumes came with bad odor... Any ideas to use silicone pans ? New to silicone ones
