I love carrot cakes a lot. I have three recipes for carrot cake in this blog. But many of my viewers asked me to share a eggless version of it. One fine day, it was tea time and i was craving something sweet with my glass of tea. So i decided to try a carrot cake with my very own recipe.
I bought a silicone mini bundt muffin tray recently and i wanted to bake something in them. So decided to try my own version of carrot cake, i made this using wheat flour, flax seed powder, oil, i even added some oats in it to make it very healthy. It turned out beautiful and loved it to the core.

Preparation Time : 10 mins
Baking Time : 15 to 20 mins
Makes : 6 mini bundt cakes
Wheat Flour / Atta - 3/4 cup / 90 grams
Oats - 1/2 cup / 45 grams
Baking Soda / Cooking Soda - 1/2 tsp
Baking Powder - 1 tsp
Oil - 1/4 cup / 60 ml
Jaggery / Sugar - 1/2 cup / 90 grams
Vanilla Essence - 1 tsp
Flax Seed Powder - 1 tblspn
Warm Water - 3 tblspn
Carrot - 1 cup grated
Milk - 1/4 cup / 60 ml (add more if the batter is too thick)
Preheat Oven to 180 Degree C.
I used a silicone mini bundt pans for making this, you can use cupcake pan or a loaf pan. Since i used silicone i oiled it lightly. If you are using other pans, oil and flour it well.
Take flax seed powder in a bowl, add in warm water and mix well. Set this aside for 5 mins.
Take wheat flour, oats, baking soda and baking powder in a bowl and mix well.
Take oil, jaggery, vanilla in a bowl and mix really well.
Add in the flax seed mix and mix well.
Add in the flour mix and fold gently.
Add in milk and mix well.
Now add in grated carrots and fold.
Spoon into the pan and bake for 15 to 20 mins.
Remove it and let it cool for 5 mins.
Now invert it and serve warm with tea.

|I brushed the inside with some oil|
|Set aside till use|
|Next you have to take 1 tblspn of flax see powder|
|add 3 tblspn of warm water and mix well.Set aside for 5 mins or so|
|Take wheat flour in a bowl|
|add in baking powder|
|and baking soda|
|add in oats|
|Take oil in a bowl|
|add in jaggery|
|add in vanilla|
|and the flax seed mix|
|add the dry mix|
|i found the batter to be too thick, so i added some milk|
|now add in carrots|
|spoon into the prepared pan|
|bake till done..insert a toothpick and check whether it is cooked or not|
|This healthy cake is perfect with a cup of milk or tea|
