    About Eggless Banana Bread Recipe

    Banana bread also known as banana cake is a type of bread made from mashed bananas. It is often a moist, sweet, cake-like quick bread; however there are some banana bread recipes that are traditional-style raised breads. Banana bread is made with plain flour, sugar, bananas, butter, milk and raising agents like baking soda and baking powder. 

    Sometimes flavourings and spices like cinnamon, vanilla, chocolate chips, nuts and dried fruits is added in the batter to enhance the taste of banana bread. This eggless banana bread has extra ripe bananas, milk and melted butter used for moist texture. 

    I made this banana bread with whole wheat flour to make it healthy and wholesome. Because of the amount of mashed banana goes in the bread, it tends to stay soft longer. I have shared all my tips and tricks to make the best ever eggless banana bread in this recipe.

    Wheat Flour - I use whole wheat flour for making banana bread. You can use plain flour for more moist cake. Using full whole wheat flour made this cake wholesome. For softer cake, you can use half plain flour and half whole wheat flour.

    Sugar - Refined sugar is used in the cake batter. You can easily swap it for unrefined brown sugar. 

    Bananas - use over ripe bananas for making banana bread. It adds aroma and also sweetens the cake. 

    Butter - I used melted butter in my bread. You can easily use flavourless oil or ghee when making banana bread. For vegan option you can use oil. 

    Flavourings - vanilla extract and ground cinnamon is the main flavourings used in the cake. 

    Raising Agent - I used baking powder and baking soda for making the cake light, moist and fluffy. 

    Milk - Milk is used to thin the batter also to make the cake soft. For vegan option you can use soy milk, almond milk or any nut milk.

    Banana bread is made into so many varieties. There are like thousands of banana bread recipes on the internet. Each variation of the bread makes it unique and special. Some of the most popular banana bread recipes are

    2) Bakery Style Basic Banana Bread - This bakery style banana bread has its texture similar to store bought ones. The texture inside is moist and soft but has a slightly dense texture. This banana bread has an addition of walnuts and flax seeds. Added nutrients!

    How to Make Eggless Banana Bread (Stepwise Pictures)

    Pre-preparation

    1)Line a 9" X 4" loaf pan with parchment paper and set aside. Preheat oven to 180 degree C or 356 degree F for at least 10 minutes.

    Dry Ingredients

    2)Take wheat flour in a bowl. I used complete wheat flour in this recipe, but you can use half plain flour and half wheat flour for making banana bread.

    Pro Tip: I used store bought packaged wheat flour and not homemade.

    3)Add in baking soda and baking powder to the wheat flour. This is your raising agent.

    4)Add in ground cinnamon. Personally I like the combination of cinnamon and bananas together. You can use ground ginger, cardamom, in banana bread.

    5)Mix this dry ingredients together using a whisk till it is combined. You can sieve this mixture through a sieve as well.

    Chopped Nuts

    6)For banana bread I prefer to use some kind of nuts for texture. Walnuts, almonds, cashews and pecans taste great in banana bread. Chop nuts into tiny pieces using a knife and set aside.

    Pro Tip: You can bake nuts in a 180 degree C oven for 8 to 10 minutes for more nutty flavour.

    Making Eggless Banana Bread Batter

    7)Take ripe bananas in a mixing bowl. I used nearly 400 grams of bananas. Make sure the bananas are super ripe and sweet.

    8)Use a whisk to roughly mash the bananas till it is pulpy.

    9)Add in sugar to the bananas. You can use unrefined brown sugar for healthy option.

    10)Add in pure vanilla extract.

    11)Add in melted butter into the bananas. For vegan option you can use oil.

    12)Use a whisk to combine this really well till smooth.

    13)Add in half of the dry ingredients into the banana mixture.

    14)Fold gently to combine. Don't over mix at this point.

    15)Add in milk. I used half cup of room temperature milk. For vegan option you can use any nut milk.

    16)Mix that gently into the batter.

    17)Add in the remaining wheat flour mixture.

    18)Add in the chopped nuts. You can use dried fruits or chocolate chips in banana bread batter.

    19)Fold gently using spatula until the batter is just combined. Don't over mix the batter. If your batter is too thick, you can add some milk.

    20)Spoon the banana bread batter in a loaf pan lined with parchment paper and spread evenly.

    Baking Eggless Banana Bread

    21)Use a butter knife to make a cut in the centre of the banana bread. This will make sure that the bread rises evenly and bakes faster in oven.

    22)Place the loaf pan in a 180 degree C preheated oven, centre rack. Bake for 35 to 40 minutes. To check whether the cake is baked, insert a toothpick in the centre of the bread. If the toothpick comes out clean then the bread is baked.

    23)Remove the banana bread from the oven, set aside to cool for 15 minutes in the pan. After 15 minutes gently remove the bread from loaf pan and allow it to cool for at least 1 to 2 hours.

    24)Now slice banana bread using a serrated knife.

    25)Serve banana bread warm with a cup of tea or coffee.

    Expert Tips

    • Instead of using whole wheat flour, you can use plain flour for better texture. Half whole wheat and half plain flour can be used.
    • Increase sugar to ¾ cup if you prefer sweeter banana bread.
    • Instead of melted butter you can use oil or ghee.
    • Any nut milk can be used for regular milk.
    • Never over mix the batter or over bake the cake. Else it will get dense and dry out.

    For Vegan Banana Bread 

    You can easily swap few ingredients in this recipe to make this entirely vegan. For vegan option instead of regular milk, you can use soy milk, almond milk or any nut milk. Also use any flavourless oil instead of melted butter. 

    Storage Suggestions

    Cool the bread completely. Place a paper towel in the bottom of an airtight storage container OR in an airtight bag. Then place the cooled loaf on top of it. Cover the bread with another paper towel. Seal.

    1. Banana bread stays good for 2 to 3 days when stored in an air tight container at room temperature.
    2. If you store in fridge, you can keep it for a week in an air tight container in fridge. You can warm in microwave for 10 seconds when serving.
    3. If you are freezing banana bread. Cool it down, wrap in plastic wrap and then foil and freeze for more than a month. Thaw it in fridge the day before serving. You can warm in microwave or in toaster.

    1)Why is my banana bread so dense?

    The more you mix your banana bread batter, the more gluten is developing in the bread – which is great for a yeast-risen, chewy loaf, but not so great when you're hoping for a tender, soft quick bread. An over mixed banana bread batter will result in a dense, rubbery loaf.

    2)How do you keep banana bread moist?

    1. Cool the bread completely.
    2. Place a paper towel in the bottom of an airtight storage container OR in an airtight bag. Then place the cooled loaf on top of it.
    3. Cover the bread with another paper towel.

    Ingredients

    • 4 no Ripe Bananas 400 grams
    • ½ cup Sugar 100 grams
    • 1 tsp Vanilla Extract
    • ½ cup Melted Butter 120 ml
    • ½ cup Milk 120 ml

    Dry Ingredients

    • 2 cups Wheat Flour 250 grams
    • 1 tsp Baking powder
    • ½ tsp Baking soda
    • 1 tsp Ground Cinnamon
    • ½ cup Pecans

    Instructions

    • Line a 9" X 4" loaf pan with parchment paper and set aside. Preheat oven to 180 degree C or 356 degree F for at least 10 minutes.
    • Take wheat flour, baking powder, baking soda, cinnamon in a bowl. Mix well using a whisk and set aside. This is your dry ingredients.
    • Take ripe banana in a bowl. Mash it roughly using a whisk, add in sugar, vanilla extract, melted butter and mix well till combined. Add in half of the wheat flour mixture in the mashed banana and fold gently. Pour in the milk and fold gently using a spatula. Now add in the remaining flour mixture, chopped nuts and gently combine using a spatula.
    • Spoon this mixture into the prepared loaf pan and bake for 35 to 40 minutes in preheated oven. To check whether the cake is baked, insert a toothpick in the centre of the bread. If the toothpick comes out clean then the bread is baked.
    • Remove the banana bread from the oven, set aside to cool for 15 minutes in the pan. After 15 minutes gently remove the bread from loaf pan and allow it to cool for at least 1 to 2 hours. Now slice banana bread using a serrated knife. Serve banana bread warm with a cup of tea or coffee.
