Bhatura is my favourite, i make them atleast once in a week or two week. Traditionally bhatura is made with yeast, but trust me i have have never used yeast in my bhaturas. I always add baking soda or powder in my bhatura. I have already shared a bhatura recipe in my website and this is my bhatura recipe using wheat flour..
Resting Time : 30 mins
Cooking Time : 45 sec to 1 min per bhatura
Whole Wheat Flour / Atta – 2 cup + more as needed
Milk – 3/4 cup
Curd / Yogurt – 1/4 cup
Salt to taste
Sugar – 2 tblspn
Baking Powder – 1 tsp
Oil – 1 tblspn + 1 tsp + for deep frying
In a bowl, take milk, curd, salt, sugar, baking powder and 1 tblspn oil. Mix well so sugar is melted.
Add in flour and knead it for 5 mins
Add a tsp of oil over it and knead for 1 min more.
Cover it wth a bowl and let it rest for 30 mins.
Divide it into equal balls. Roll one into little thick roti.
Deep fry it on hot oil, press the top with a slotted spoon it will puff up. Flip over and cook on other side as well till golden.
Drain and serve with aloo curry.

|Add in wheat flour|
|knead it to a dough|
|drizzle some oil over it|
|cover and let the dough rest for 30 mins|
|now the dough is done|
|divide it into equal portions|
|take a portion|
|roll it in to smooth ball|
|Roll it into bhatura|
|Drop it in hot oil|
|press on top with a slotten spoon|
|now it has puffed up|
|flip over and cook till golden|
|Drain it and serve|
