Chettinad Masala Kuzhambu Recipe

I have been making lots of kuzhambu recipes recently, i am getting very fond of chettinad kuzhambu and making them quite often. This is what i made couple days back and yesterday i made saiva meen kuzhambu. Delicious it was.

Cooking Time : 30 to 35 mins

Ingredients:


For Masala:
Oil – 1 tblspn
Onion – 1 medium size chopped
Tomato – 2 chopped
Coconut – 1/2 cup grated
Fennel Seeds / Saunf / Sombu – 1 tsp


For Gravy:
Oil – 3 tblspn
Fennel Seeds / Saunf / Sombu – 1 tsp
Bay Leaf – 1
Cinnamon – 1 small piece
Onion – 1 medium size chopped
Garlic – 5 cloves chopped
Brinjal – 2 cut into long slices
Chilli Powder – 2 tsp
Coriander Powder – 1 tblspn
Turmeric Powder / Manjal Podi – 1 tsp
Salt to taste


Method:

Heat 1 tblspn oil in a kadai. add in the onions, tomatoes and cook till it turns mushy. Take this in a blender, add in coconut and fennel seeds, make it into a fine puree. Set aside.

Now heat some more oil in the same kadai. Add in fennel seeds, cinnamon and bay leaf. Saute for a min.

Add in onion, garlic and saute for 2 mins or so.

Add in brinjal and toss well. Now add in chilli, coriander and turmeric powder. Toss well.

Add in water and cook till brinjal is half cooked, add in coconut masala and cook till oil separates.

Serve over rice.

Take all your ingredients
Heat some oil in a kadai
Add in some onions and tomatoes
saute till the tomatoes turn mushy
take it in a blender
add in coconut
and some fennel seeds
make this into a smooth puree
Heat some oil in the same kadai
add in some fennel seeds, cinnamon and bay leaf
add in some chopped garlic cloves
add in some onions
cook till the onions turn soft
add in sliced brinjals
toss well in the oil
once it is well mixed
add in coriander, chilli and turmeric powder
toss well
pour in water
mix well
add some salt and cook till the brinjal is done
now the brinjal is half cooked
add in the coconut masala
bring it to a boil and cook till oil separates
done
serve

    Simple recipe. Good one.. can I replace brinjal with any other vegetable?
