I have been making lots of kuzhambu recipes recently, i am getting very fond of chettinad kuzhambu and making them quite often. This is what i made couple days back and yesterday i made saiva meen kuzhambu. Delicious it was.

Ingredients for Chettinad Masala Kuzhambu
For Masala:
- Oil - 1 tbsp
- Onion - 1 medium size chopped
- Tomato - 2 chopped
- Coconut - ½ cup grated
- Fennel Seeds / Saunf / Sombu - 1 tsp
For Gravy:
- Oil - 3 tbsp
- Fennel Seeds / Saunf / Sombu - 1 tsp
- Bay Leaf - 1
- Cinnamon - 1 small piece
- Onion - 1 medium size chopped
- Garlic - 5 cloves chopped
- Brinjal - 2 cut into long slices
- Chilli Powder - 2 tsp
- Coriander Powder - 1 tbsp
- Turmeric Powder / Manjal Podi - 1 tsp
- Salt to taste
How to Make Chettinad Masala Kuzhambu
- Heat 1 tbsp oil in a kadai. add in the onions, tomatoes and cook till it turns mushy.
- Take this in a blender, add in coconut and fennel seeds, make it into a fine puree. Set aside.
- Now heat some more oil in the same kadai. Add in fennel seeds, cinnamon and bay leaf. Saute for a min.
- Add in onion, garlic and saute for 2 mins or so.
- Then add in brinjal and toss well. Now add in chilli, coriander and turmeric powder. Toss well.
- Add in water and cook till brinjal is half cooked, add in coconut masala and cook till oil separates.
- Serve over rice.
