Brinjal Pepper Masala Recipe

This is a great sidedish for rice, taste amazing with roti as well.

Preparation Time : 10 mins
Cooking Time : 30 mins
Serves: 4


Oil - 3 tblspn
Fennel Seeds / Sombu / Saunf - 1 tsp
Onion - 1 large sliced thinly
Bell Pepper - 1/2 sliced thinly
Tomatoes - 2 large chopped finely
Brinjal - 1 large sliced thinly
Salt to taste
Turmeric Powder - 1 tsp
Chilli Powder - 1 tsp
Coriander Powder - 1 tblspn
Cumin Powder - 1 tsp
Garam Masala Powder - 1 tsp


Heat oil in a kadai. Add fennel and let them sizzle.

Add onions and peppers along with salt and turmeric and mix well. Cook till onions soften.

Add in tomatoes and cook that down till mushy.

Add in spice powders and mix well.

Now add in brinjal and toss well in the masala.

Cover and cook for 10 to 15 mins.

Now it is done.

Serve over rice.

Slice your veggies
Heat oil 

Add in fennel seeds

Add in onion and red pepper

toss well

add salt

add turmeric powder

toss well and cook till done

add in tomatoes

now it is done

add in spice powders

mix well and let the raw smell leaves from it

now it is done

add in brinjal 

mix well

cover it with a lid

now it is cooked

now it is done
