    Zucchini Banana Muffins Recipe

    I have seen so many recipes of baked goodies in which they use zucchini, at first i thought it is weird, but then I realised that we add carrots in baking and it taste pretty good. So i shall try this too..Adding zucchini in baked goodies like cakes, bread and muffins is not at all a bad idea, it is almost like an extra moisture we add in cakes. I tried this muffins with a combo of banana and zucchini and i loved it to the core. First of all it was moist, fluffy and very soft. Not to mention really delicious.

    A muffin is an individually portioned baked product, but the term can refer to one of two distinct items: a part-raised flatbread (like a crumpet) that is baked and then cooked on a griddle (typically unsweetened), or a chemically leavened quick bread (like a cupcake) that is baked in a mould. While quick bread American muffins are
    frequently sweetened, savoury varieties made with ingredients such as corn and cheese, as well as less sweet varieties such as traditional bran muffins, are available. The English flatbread variety is of British or other European origin and dates back to at least the early 18th century, whereas the quick bread variety originated in North
    America during the 19th century. Both types are common in today's world.

    What is zucchini ?

    Summer squash, also known as courgette or baby marrow, is a vining herbaceous plant whose fruit is harvested while the immature seeds and epicarp are still soft and edible. It is related to, but not identical to, marrow; when mature, its fruit may be called marrow.

    Ingredients for Eggless Zucchini Banana Muffins

    Zucchini :
    Zucchini has a mild flavour that is slightly sweet and slightly bitter, and it has a rich texture. When zucchini is cooked, its sweetness becomes more apparent. Although zucchini is tender to bite into even raw, cooking softens it.

    Banana :

    The banana is a yellow long fruit that is sold in groups of three to twenty, similar to a triangular cucumber, oblong, and normally yellow. Depending on the variety, it has a sweeter or less sweet flavour.

    Eggless Zucchini Banana Muffins Recipe

    Ingredients

    • All Purpose Flour / Maida - 1 cup / 120 grams
    • Baking Powder - 1 tsp
    • Baking Soda / Cooking Soda -½ tsp
    • Salt a pinch
    • Sugar - ½ cup / 100 grams
    • Oil - ⅓ cup / 80 ml
    • Vanilla Essence - 1 tsp
    • Zucchini - ¾ cup grated
    • Banana - ½ cup mashed
    • Chocolate Chips - ½ cup

    Instructions

    • Preheat oven to 180 degree C. Line a muffin tray with muffin cases or oil a silicon cupcake moulds.
    • Take banana, oil, sugar, vanilla, zucchini in a bowl and mix well.
    • Now add in flour, salt, baking soda and baking powder and fold gently.
    • Now add in chocolate chips and fold gently.
    • Use a icecream scoop to fill the muffin mould with the batter.
    • Now top with some chocolate chips and bake for 25 to 30 mins till a toothpick inserted comes out clean.
    • Remove it and cool completely.
    • Enjoy.

    Step by Step

     
    Take all your ingredients
    grate your zucchini
    set aside
    take mashed banana in a bowl..my bananas were very over ripe, hence this colour
    add in oil
    add in sugar
    and your zucchini
    give a good mix..let the sugar melt
    add in vanilla
    mix well
    add in flour
    salt
    baking soda and baking powder
    fold everything well
    add in chocolate chips
    fold gently
    grease a silicon muffin moulds
    use a ice cream scoop to scoop out the batter
    fill the mould
    time to bake
    and ya, i topped everything with extra chocolate chips
    all baked
    Enjoy warm
    so soft, moist and fluffy

      Looking great.. yummy☺.. can we use wheat flour instead of miada.
      What is the difference between using wheat flour And miada in texture wise I am asking.

      And can we use jaggery instead of sugar.if so How much jaggery we should use.

      @Aswiniyes you can use wheat flour and jaggery in this recipe. Adding wheat will make a little dense muffins but still it will taste good
