Delicious soft zucchini banana muffins which is eggless and easy to make and taste so good for breakfast or brunch.
I have seen so many recipes of baked goodies in which they use zucchini, at first i thought it is weird, but then I realised that we add carrots in baking and it taste pretty good. So i shall try this too..Adding zucchini in baked goodies like cakes, bread and muffins is not at all a bad idea, it is almost like an extra moisture we add in cakes. I tried this muffins with a combo of banana and zucchini and i loved it to the core. First of all it was moist, fluffy and very soft. Not to mention really delicious.

Ingredients for Eggless Zucchini Banana Muffins
Zucchini has a mild flavour that is slightly sweet and slightly bitter, and it has a rich texture. When zucchini is cooked, its sweetness becomes more apparent. Although zucchini is tender to bite into even raw, cooking softens it.
The banana is a yellow long fruit that is sold in groups of three to twenty, similar to a triangular cucumber, oblong, and normally yellow. Depending on the variety, it has a sweeter or less sweet flavour.

Eggless Zucchini Banana Muffins Recipe
- All Purpose Flour / Maida - 1 cup / 120 grams
- Baking Powder - 1 tsp
- Baking Soda / Cooking Soda -½ tsp
- Salt a pinch
- Sugar - ½ cup / 100 grams
- Oil - ⅓ cup / 80 ml
- Vanilla Essence - 1 tsp
- Zucchini - ¾ cup grated
- Banana - ½ cup mashed
- Chocolate Chips - ½ cup
- Preheat oven to 180 degree C. Line a muffin tray with muffin cases or oil a silicon cupcake moulds.
- Take banana, oil, sugar, vanilla, zucchini in a bowl and mix well.
- Now add in flour, salt, baking soda and baking powder and fold gently.
- Now add in chocolate chips and fold gently.
- Use a icecream scoop to fill the muffin mould with the batter.
- Now top with some chocolate chips and bake for 25 to 30 mins till a toothpick inserted comes out clean.
- Remove it and cool completely.
