    Beetroot and Coconut Burfi recipe with step by step pictures. This Beetroot Burfi recipe is made using grated beetroot and coconut. It is a different and simple recipe for festival season.

    I am hunting for easy diwali sweets and snacks to try and share it here before diwali..I have made quite a few recipes for diwali, and i will be sharing them soon..

    Ingredients for Beetroot and Coconut Burfi

    • Beetroot- 1 cup grated
    • Coconut - 1 cup grated
    • Sugar - 1.5 cup
    • Ghee - ¼ cup
    • Cashews - 2 tbsp
    • Cardamom Powder - 1 tsp
     

    This one is quite a different barfi recipe, it has beetroots added in it, normally beetroots are used to make halwa, this time i made it into barfi. For burfi we need to add extra sugar which makes it set like a barfi.

    I used beetroot in this one, you can use carrots instead of beetroot. The only thing is you have to cook it till it leaves the sides of the pan and ghee starts to ooze out from the pan.

    How to Make Beetroot and Coconut Burfi

    1. Heat ghee in a pan, add in nuts and fry till golden.
    2. Add in beetroot and coconut and mix well. Stir fry this for 5 mins till raw smell leaves from the beets.
    3. Now add in sugar and keep mixing, the sugar will melt and the mix will get thick. Keep mixing.
    4. Once the mix starts to leave the sides, add in cardamom powder and mix well.
    5. Spoon this in a greased tray and spread evenly.
    6. Let it set, cut it into squares.
    7. Remove it and serve.

    Beetroot Burfi Step by Step

     
    Take all your ingredients
    Peel a medium size beetroot..you can use carrots instead of beets
    grate it finely
    measure 1 cup
    Grease a square pan with ghee
    Melt ghee in a pan
    add in nuts
    fry till golden
    add in coconut and beets..The coconut should be finely grated,
    if it is not fine, take it in a blender and run it once till it is fine
    saute well
    I kept on sauteing till the raw smell leaves
    Now it is almost done
    add in sugar..yes lots of it
    mix well
    now the sugar is all melted
    keep cooking
    keep on stiring
    it will get thick
    keep on mixing
    it will slowly start to leave the sides
    keep mixing
    now you get see it is really thick
    at a point the ghee will start to leave from the  mix 
     
     
    add in cardamom powder
    mix well
    spoon this in the tray
    spread it evenly..leave it to set
    once it is set cut into squares

      Hi..My barfi mix got a little caramelized and hence did not form the dough..Also I do not get the liquid consistency after putting in the sugar.could you guide me a to what may have one wrong?
